Ugh! Can’t stand it when I get in bed and a thought pops in to my mind, and I know I’ll never get to sleep until I take the necessary action! You know how when you buy a bag of prepared salad and it gets all brown and soggy? Well, cookies don’t do that!

Natural Peanut Butter Cookies.
Working with natural peanut butter is rather tricky, though I wasn’t willing to give up my quest for developing a cookie with an incredibly intense peanut flavour, that is mostly crisp in texture, with a slightly chewy centre. Lost count on the number of tweaks and trials on the road to success. Hope you find them equally satisfying!

The work continues on my other cookie flavours that are in the almost there stage. Now that I closed the peanut butter chapter, I can focus on the other 4. Those should be good to go by the beginning of April. Really, I can’t go past that time line as the trials of all those cookies means I have to keep tasting them, which means more calories…the worst part of the whole process.

Eureka! Finally mastered my Peanut Butter Cookie recipe! After many trials, modifications, and a few unprintable words, I am satisfied with the final result. Working with natural peanut butter proved to be a challenge. So glad that I stuck to the plan of using it because the cookie is packed with a rich peanut taste. Many people asked if I had a peanut butter cookie, so for those of you looking for it…. the wait is over!

Just in case anyone else was wondering…here is a list of recommended beverages to pair up with your favourite cookie:
Chocolate Chip-Ice cold milk! What else?
Oats and Raisins-Hot tea or warm apple cider.
Ginger Spice-A favourite brew of coffee or tea.
Coconuts and Lime-Limeade,, a cousin to lemonade. Prepare with limes instead…you all make your own, right?
Lemon/Almond/Cherry/Chocolate-I’m still thinking! Anyone have a suggestion?
