Welcome! I'm Miranda
A “little” about me
I’ve been cooking with my Dad since I could first peek over the countertop standing on my trusty teetery-tottery chair. Growing up with my dad, a pastry chef by training and cook by trade, I have lots of fond memories of spending time in the kitchen learning to cook delicious meals and desserts for all our friends, family, and co-workers. I fondly remember the smell of fresh banana bread coming out of the oven, and the special delight from eating the freshly baked bread for breakfast as a child. My father and I still meet to bake a few times a year to keep the memories alive and make piles upon piles of cookies, bars, and cakes year after year.
Every Christmas you will find us together, for three solid days of baking and working side by side, joking, teasing, and baking up a storm. Each Christmas we try to outdo ourselves from the year before. It grows more outrageous each year…. 58 recipes in 3 days for Christmas 2022 (certainly something for everyone, right?!?!). My father has been retired from cooking for over 9 years. With his upcoming full retirement in the next few years, he has great ambitions to help me fill orders and find delicious new recipes to explore. We cooked up my signature brownie together, the "Mountain Bandit's" in our secret lab, inspired by the red panda and brings together some of my favourite flavours into a chewy, silky bite of spiced chocolatey goodness.
My original career was working as a Health Care Assistant; I also grew up helping my mother with our respite and home share clients who have developmental disabilities. As an HCA, I work in dementia and palliative care. While I cherished my time there, I enjoyed the change of pace working briefly as an OFA for BC Ferries out on the ocean. I honestly couldn’t stay away from health care and returned back to continue my work with dementia.
In recent years, I have struggled with my own digestive health and am learning to manage and coordinate severe dietary restrictions. Even when I can’t enjoy the food myself, baking delicious treats for others brings me immense joy; my mind bursts with new recipe ideas to excite loved ones’ taste buds.
Having learned to bake for my celiac and vegan friends over the years, I learned to adapt my baking abilities so as many people as possible were able to enjoy delicious baked treats. This perspective on baking has only served to increase my enthusiasm for learning to bake gluten-free, vegan, and other alternative recipes; as well as healthy health-conscious cooking and baking in general. I’m looking forward to adding more gluten-friendly and diet/allergy-friendly recipes in the future.
With great family encouragement and thoughts of more people having moments of mouth-watering excitement, I am expanding to sell my baking at markets in the spring, summer, and fall.
Follow my page or on instagram to keep updated on where to find me at my next market.
Thank you so much for taking an interest in supporting my small local home bakery, without you I'd crumble.
With much appreciation and love,
Miranda
