The best ever French Chocolate cake. So simple, but yet so marvellous. Lots of dark chocolate, butter, a bit of sugar, eggs, vanilla and only 40 gr of flour! Voilà!

Cheese soufflé, afternoon bake for Friday goûter. Why wouldn't you spoil your family with this very Frenchie, very fluffy and so delicious treat?! Here is the recipe, so now you have no excuse but make it. This recipe is courtesy of

Ingredients:
3 tbs butter
3 tbs white flour
1 cup of milk
salt, pepper
3 yolks
1 cup of grated cheese (any cheese you like) plus a bit more for covering the tops of ramekin.
4 egg whites bitten to soft peaks

Method:
1. Butter soufflé cups and put in fridge to set.
2. Melt butter in small pot, add flour, stir it to combine.
3. Once mixture starts to simmer, add milk and stir or whisk constantly.
4. When mixture starts to simmer, take it from the heat, add salt, pepper. Stir in yolks and cheese.
5. Beat egg whites.
6. Fold whites into cheese mixture.
7. Take ramekins from the fridge, butter them one more time and then sprinkle with flour.
8. Pour batter to each ramekin and fill it to the top.
9. Sprinkle with grated cheese.
10. Bake at 180C for about 20 min.
Serve immediately. Soufflé will collapse in about 5 min, so don't wait to impress everyone.

Moelleux au citron (Fluffy Lemon Cake)
A true moment of lightness and sweetness. Quick and easy weekend baking.
Here is the recipe:
Ingredients:
80 g flour
40 g cornflour
130 g icing sugar
80 g butter
4 eggs
7 g BP
1 or 2 lemons

Method:
1. Separate whites from yolks.
2. Whisk egg yolks and sugar until the mixture whitens, then add lemon juice.
3. Add melted butter, flour, baking powder and whisk again until the dough is homogenous.
4. Stir lemon zest into the dough.
5. Beat egg whites with a pinch of salt and fold them gently to the dough.
6. Pour the batter into a buttered and floured 20 cm baking dish.
7. Bake for 30 minutes at 180 C°.
8. Then cool the cake and sprinkle with icing sugar.

I don't usually make cookies, they seem to be very boring to make. But here the best ingredient - chocolate was involved, so, I had to give it a try. The result was terrible - I couldn't stop eating them :))) Here is the recipe

White chocolate cookies

Makes about 30 cookies

Ingredients
Flour 240 g
BP 1 tsp
BS 1/2 tbsp
Brown sugar 110 g
Castor sugar 100 g
Butter 120 g
Egg 1
Vanilla pod 1
White chocolate chips 250 g

Method
1. Sift the flour, baking powder and baking soda together. Set aside.
2.Combine butter, brown and castor sugar until creamy and smooth.
3. Add vanilla pod seeds and beat for about 5 min.
4. Incorporate the egg and then add flour mixture. Beat for 5-7 min.
5. Add white chocolate chips and mix until combined.
6. Refrigerate overnight. I did skip this stage and cookies turned out just fine. So if you don't have time, don't stress about it.
7. Bake at 170C for 10 min, or 14 min if you like the crispiness. Use silicon mat to avoid disappointment ;)

Today's bake - Seed bread
It might seem like all breads I baked lately look the same, but they are very different in taste, texture and aroma. I love baking breads. When I bake my bread I feel fulfilled and satisfied, like you do something good. We all need to make our own breads. Try to bake your loaf and then tell me how you feel.

Bürli bread - classic Swiss bread. The dough is a combination of three types of flour: white bread, spelt and rye flour. Soft and creamy crumb and quite thick and hard..ish crust.
