September 28, 2023 Bake Day

This week was a tough one. Yesterday we said goodbye to our little Harley, after 14 years of sharing space in this life together. Living on this acreage for the last 6 years was a paradise for her, and having an in-house bakery meant an endless supply of breadcrumbs on the floor to “help” clean up. She was loved by the kids and kept her younger bro Remi in check, even though he was 70 pounds bigger than her. I think it was for the best that I still had to shape loaves. As I’ve said before, it is a meditative process where I have time to lose myself in the work, or my thoughts. It gave me some time to gather myself before her departure and appreciate the insights days like this give. Life is full of challenges, until, one day, it isn’t. They’re all done. So I guess I’ll soak them up one by one and remember how fortunate I am to have a life in which challenges can appear - and that help me see how precious some experiences are. Like the love of a pet.

Happy Fall!

Yesterday school kicked back into gear, and change abounds here at the acreage and bakery. My little guy bravely but nervously attended his first day of Kindergarten, and my daughter charged into Grade 4 with excitement and anticipation. Both me and my wife held back a few tears as Luca marched into the school for the first time. Today, Dad did deliveries by himself, and I admit it was a little tough. I missed my helper. But, I was able to have a few conversations with customers old and new so it was a satisfying day.

I hope the season change breathes new life into some of your old dreams that have perhaps been parked in the summer bustle. If you need a tried and true meal on the table through the chaos, I’ve got you covered. See you next week :)

Country Loaf Update!

Hello all; in order to increase the quality of my country loaf (my personal favourite), I am shifting to offering it only every other week. This allows for a larger volume of dough meaning I can use the mixer to strengthen the gluten network more effectively than smaller by-hand batches allow. As this mornings’ bake demonstrates, the structure of the loaf is just so much better. Rest assured, 90% of the process is hands-on, I just find this step to produce a far superior loaf that has less variation in quality.

For those die-hard country loaf fans who never miss a week, thank you for riding the quality waves, and remember these freeze well!

Also thank you for the well wishes on my race last week. It was an amazing experience that was successful in every way. My cup is full.

Tomorrow morning I’ll be fuelling up on classic loaf, peanut butter and homemade jam for my first trail race up Moose Mountain. This pre-run breakfast has served me well during training this summer - I highly recommend :).

On Time

By next week’s delivery we’ll be beyond the halfway point of August, and less than 3 weeks away from another school year beginning. I’ve spent most of my adult life trying to control time - productivity hacks, inbox zero strategies, GTD (only the true geek will know what that means), and following the proclaimed efficiency gurus on how to squeeze more of life in to the stubbornly static 24 hour day. Slow food - like my bread - doesn’t really fit the productivity model. Neither does stay-at-home parenthood. And yet…some of the most profoundly satisfying moments - when time melts away into pure being - come from these two pursuits, when my insane mind forgets that it’s supposed to be worried about the next thing that needs to be done and I’m blissfully alive. As Oliver Burkeman points out in his book “Four Thousand Weeks, Time Management for Mortals”, productivity is a trap. There is no end game, only more work to fill the holes you create as more tasks are moved off your list. There will always be more to do than we’ll ever be able to do with our short time, so hopefully with what’s left of summer we can all find the wherewithal to be in the moment as those 3 weeks are scratched off the ‘what’s left of life’ tally. I say this with joy and presence, not with regret - since acknowledging the thing helps us appreciate the thing more. Happy summer.

Summer Vibes

We’re smack in the middle of the dog days of summer out here on the acreage. Between keeping up with the kids, lawn, garden, chickens, and house construction things are about as busy as they get. We’ve spent time in the mountains pretty much every week, and are hopeful for a couple more camping trips before school kicks into gear (are we really half way already?!).

Baking is a balancing act with the competing priorities but things are still turning out fine.  This week’s country loaf was about as good as I’ve ever managed!  I can see the new bakery space taking more and more shape every day. In a couple weeks I should be able to post an update, and if I’m really lucky I’ll be moving my equipment around the time the kids head back to school. Until then, I’ll be enjoying days like today when I deliver in flip flops and shorts. My kind of work attire :)

The Flour Folks

As a small business owner, sometimes things don’t always go according to plan. Or rather, sometimes the owner forgets to plan! For my last bake, I found myself short on flour and too late remembered to reach out the good folks at Highwood Crossing ( ) who supply my organic, locally sourced flour that makes this bread a level up from what you’ll find on the shelves of any ordinary store. Knowing I was in a pinch, Tony met me halfway with a truckload of flour to make sure I didn’t miss the next day’s bake. I got to put a face to the name and hear about their genesis and evolution over the past 20+ years over a good old fashioned chat in a parking lot.

Though we live in an age of online everything, it was refreshing to have such a positive interaction of small business helping small business. I have, and will continue to endorse these folks and the great products they provide. Thank you Tony and team for making what I do possible, and supporting so many like me.

Back at it!

Sorry for getting this update out late this week, but we arrived home today from our little camping adventure with the kids and are finally unpacked! I’m feeling refreshed and grateful to live in a country where a little driving plants you squarely in the middle of breathtaking scenery and zero cell service. If only we could all have a little more of that in our lives. I hope your summer includes some time away from the bu****it of modernity :)

Bakery Update

Construction on the new garage has been underway for some months now, but we’re getting closer! Soon I won’t be hiding in the basement laundry room anymore, will enjoy more natural daylight, and have space to sprawl out. In some ways I’ll almost miss the little dungeon that’s been a place where so much creativity and ideas have formed while I worked out what’s nexts in this life. Almost.

Summer Vacation Update

Well school comes to a close next Tuesday, and I’m sure everyone is excited for summer vacay time! The bakery will be closed July 13 and August 24 - remember to snag an extra loaf or two before then to freeze :)

I’ll post a picture of the new bakery space next week to show you how it’s shaping up. Things are moving along, but like all things it takes a little longer than we hoped. Happy Summer!

Bake Day: June 15, 2023



The Delivery Boy

When I launched this little bakery last Fall, it was meant to allow me to engage with my community, do something productive, and raise my family. It isn’t lucrative, but it feeds my soul and teaches me. The lessons are many this past year, none as profound as the slipperiness of time. Luca has been on weekly ride-alongs from the beginning, and at first his $1/week wage was to bring a good attitude and let Dad do the work. Today, he is managing every single at-home delivery and is insistent it is by himself. He rings the door and greets the customer with bread in hand, or leaves it respectfully on their doorsteps. If an Amazon package is there, he’ll pick it up so he can helpfully hand that over too. His wage is higher now that he holds more responsibility. I know that I’ll blink and he’ll be at his first “real” job, so I’m trying to pause and soak these little lessons up, moment by moment.
