My name is Stéphanie Armengau and I am a lawyer and former Crown Prosecutor, specialized in Criminal Law. When I became a mother, I started baking and cooking a lot and it became a true passion. I was truly missing the baking and flavours of my childhood, especially the excellent breads w

e find in France. After trying many bakeries in Toronto, I was never truly satisfied with the bread texture or its unhealthy ingredients: unnecessary sugars, artificial additives, oils and industrial yeasts that make most people gluten-intolerant. Having a background in microbiology, I decided to grow my own sourdough to make REAL artisan bread and viennoiseries. I have never looked back. I now make organic sourdough whole wheat, 10-grain, dark rye, country loaves, whole wheat / flax, whole wheat / rye, chia and white breads all with flours that come from local mills in Southern Ontario. Sourdough is the healthiest bread you can eat and has been used for thousands of years before the introduction of the industrial yeast. It uses lactic fermentation that helps processing the gluten. Contrary to the yeast that makes alcoholic fermentation, sourdough bread is easy on your digestion and for gluten intolerant people (like me). My breads are high in fibres and proteins. They satisfy your appetite until your next meal. I also make handmade delicious traditional organic butter croissants, Lindt chocolate croissants, brioches, cinnamon rolls and cakes. This is a nice reminder that an authentic sourdough bread does not have commercial yeast, and its starter does NOT have any added commercial baker yeast either. Why? Because the baker yeast creates an ALCOHOLIC fermentation that is very fast to do. Your bread is done in 3 hours. This is HOW grocery stores who pretend selling sourdough are mass-producing a product, that is otherwise complicated to make. A sourdough starter is a LACTIC fermentation. A sourdough bread will take between 8 to 24 hours to be done. Any sourdough bread that costs less that $10 for a kilogram, and you look at the labels. 99.9%, they add yeast to the dough. This is called FAUX-DOUGH. Not sourdough bread!

‪21 years ago, I proudly walked on this stage to get my Law degrees and shake hands with Richard Pound, 17th Chancellor of McGill University. I was a recent and nothing would get in the way of my dream to become a lawyer (BCL/LLB’05). I practiced criminal Law as Crown attorney for almost a decade flying to Northern Quebec on First Nations Reserves (Ungava Bay, James Bay and Abitibi) and then Alberta.
Little did I know, I would become a mom / full time Entrepreneur Small Business Owner - Baker Chef in Toronto today and enjoying it so much. Life truly has different chapters for different periods. I wish we had many lives to accomplish all that we want to do.

Il y a 21 ans, c’est avec grande fierté que je suis allée chercher mes diplômes de droit et serrer la main de Richard Pound, 17ième chancelier de l’Université McGill. Je venais juste de survivre à un inexplicable accident cérébrovasculaire et RIEN ne m’empêcherait de réaliser mon rêve de devenir avocate (BCL/LLB’05).
J’ai pu réaliser ce rêve en pratiquant le droit comme procureure de la couronne avec les Premières Nations Autochtones dans le grand Nord québecois de la Baie James, Baie d’Ungava et Abitibi pour ensuite continuer à Edmonton en Alberta. Je ne pouvais imaginer qu’un jour, je serais maman et propriétaire Cheffe Boulangère à Toronto. La vie a beaucoup de chapitres. C’est un très long livre dans lequel chaque partie a son importance. Pour moi, le succès n’est pas un objectif en soi mais bien le parcours pour y arriver.

Here’s how I bake multiple items at once with a single timer setup. Each pastry has its own countdown: baguette, croissant, muffin, cinnamon. When one finishes, I pause and move to the next, keeping the oven humming.
