Another week another batch of sourdough🙌 what should I do this weekend? I am going to be working with some healthy grains in the next coming weeks, so think rye and seeds and such. I prefer to choose healthy so I need to incorporate more of that into my baking.
I also have a really cool idea of what I am going to offer at the markets this summer and it has nothing to do with baking but is still something yummy to eat, so stay tuned 🙌

Gardening proves one must have patience… this is not my rhubarb this is a ladies down the street cause I am still waiting for mine to establish itself on year two lol. These chocolate sourdough babka swirl buns turned out divine 🤎 sourdough baking sometimes can be a challenge and unpredictable so I was nervous to try. But the end result was amazing. These will be gracing the Castlegar farmers market shortly and also available for pre order on my website.

Working on some new treats for the market in the next coming weeks. This is called Babka, it is basically a Jewish twisted yeast cake bread. It originated in the early 19th-century Jewish communities of Poland and Ukraine. I am excited to play with fillings and make these into single sized servings. Can’t wait to show you what I come up with 🙌

Did you know eggs have what is called a bloom on the outside of the shell. This bloom protects the contents of the egg. When you wash it off the egg is left unprotected and in fact you can wash the bacteria into the egg. The bloom helps keep eggs fresh and can be left at room temperature and also left way longer in long term storage then washed eggs.

These eggs in the picture haven’t been washed, but they are pretty clean…. Factory chicken eggs wouldn’t look like this as they are crammed into unsanitary and unhealthy conditions, and that is why eggs started being washed I am sure.

One more thing eggs with bloom can be water glassed and last on a shelf for up to a year! So don’t wash your farm fresh eggs, keep them the way nature intended 🐓

Oxymels are nothing new they have been around since 400 BC which surprises me not more people know about them! ( even including me until now) So many of you have heard of fire cider right? That is an oxymel that gained popularity. What I love about them is it is an easy way to get a herbal extract to taste good and pack a punch of health benefits!

So why would you use an oxymel?
Supports digestive health, boost immunity, respiratory health, anti-inflammatory, full of antioxidants

How does it work? Raw apple cider vinegar, aids in digestion and helps extract the medicinal benefits from the herbs.
Raw honey- soothing antimicrobial and antiviral properties

Now you ask….

How do I use it? That is easy you can take it on its own because it tastes great. Or you can drink it as an elixir with sparkling water. Or use it in culinary as a salad dressing base. And I am sure there are many more options out there.

So this is my little runt, this chicken should be the size of a normal chicken but it is a dwarf. It is interesting the flock fully accept he/she for its size. I don’t imagine its life will be long but we can only give it the best life while it is on the earth plain. I need a clever name…. Any ideas?
