Imported from Down Under: An Australian friand: a delicacy that is completely new to Calgary!

Lakeview Gluten-Free Bakery is proud to announce a new product: the popular Australian delicacy, the friand,

We have friands on the shelves of the Lakeview Gluten-Free Bakery for the month of February 2020.

Our special Canadian friand is a baked delicacy that is delicious, nutritious, and low in carbs. It is completely gluten-free.

A friand is a small almond cake popular in Australia and New Zealand, closely related to the French financier.

The principal ingredients of a traditional Down Under friand are almond flour, egg whites, butter, and powdered sugar (but we make it easily with monk fruit and erythritol to ensure that it is low-carb). Thus, the friand fits well into the Joy of Keto low-carb, sugar-free product range.

It is baked in small moulds, typically oval in shape

Ingredients: almond flour, butter, egg whites, whole egg, rice flour, potato starch, tapioca starch, coconut flour, baking powder, monk fruit, erythritol, salt, xanthan gum, lemon juice. Plus raspberries or blueberries

PLEASE BRING YOUR OWN SHOPPING BAGS TO THE LAKEVIEW GLUTEN-FREE BAKERY on 90th Avenue

This year, in March, we will be celebrating FOUNDER'S DAY at the Lakeview Gluten-Free Bakery on 90th Avenue.

Master Baker and Owner, Brian Hinton will have been a bakery owner and manager in Calgary FOR THIRTY YEARS!

Things have really changed in the past 30 years. And we are moving with the times.

So, as part of our new sustainability initiatives, we are phasing out all single-use plastic in our bakery.

It will take a while but the plastic bags will be the first to go.

Plastic bags have to go!

Brian is a huge innovator in Calgary's baking scene. He introduced gluten-free baking more than ten years ago. Now, we cannot continue to focus on the health of people with allergies and sensitivities and ignore the other environmental issues related to a bakery's operation.

This is serious business. We've made a commitment and we'll follow through. Let's ask other bakers in Calgary where their ingredients come from, too!

REGENERATIVE AGRICULTURE

Greetings, customers,

Just before Christmas, we announced that at the Lakeview Gluten-Free Bakery and Joy of Keto, we were making a commitment to support REGENERATIVE AGRICULTURE.

This is a huge commitment for a small enterprise -- to explore all the dimensions of how we can be a sustainable, ethical and viable enterprise in the plant-based food industry.

We've had a few responses so far.

One was a MASSIVE YAWN from a prominent (and incredulous) bakery manager, who clearly thought that this was all foolishness.

(We know better so we were not deterred.)

Another one was from one of our major suppliers, Blue Diamond Almonds in California. We found that they are already well on the path to regenerative agriculture and we're so thrilled to hear that.

The California almond industry has been the subject of major criticism for some time from environmentalists -- so this is welcome news.

Our coconut suppliers could be a bit more tricky -- but we are onto it -- and will report back to our customers as soon as we have some progress and can see a way forward.

Please do not greet our sustainability initiatives with a yawn.

We hope that our customers are as concerned as we are about these issues. They are not marginal or irrelevant!

WE'RE UNDER NEW MANAGEMENT!!

Greetings, all our customers.

From 1 January 2020, the Lakeview Gluten-Free Bakery will be under new management, with Founder/Owner Brian Hinton, our Master Baker, taking over full management of the bakery and the store.

We will have the same dedicated staff and beautiful products with a couple of great new additions in January and February.

We will have monthly specials and promotions in the store.

We are about to set up a dedicated Facebook site and website for the bakery. Please bear with us.

PLEASE NOTE THAT NO OTHER FACEBOOK SITE IS CURRENT.

Throughout January, we are offering a substantial discount for customers who received a discount coupon in December.

Happy New Year to all of you who filled our store with laughter and Christmas cheer.

SINCERE APOLOGIES

Many apologies to our customers for not opening our store (Lakeview Gluten-Free Bakery) today.

We sincerely apolgize for the late notice and inconvenience.

We had a most serious medical emergency today and as all staff had rostered days off, we were unable to staff the bakery at late notice.

The bakery is closed tomorrow (Sunday) and will reopen on Monday at 9 am. until 6pm
