Earl Grey and raspberry, first bite, no words needed.

This one was a single tall tier — Earl Grey cake, raspberry cream filling, and that crisp, almost architectural edge on the buttercream that makes people ask if it's fondant. It isn't. Just patience and a warm bench scraper.

J&K went for something quieter than the flower wall behind them, and I loved that. Sometimes the cake's job is to hold its own in a big room without shouting.

This is the unglamorous middle part rarely seen — rows and rows of tiny sugar blossoms drying flat before they earn a spot on anything.

Each one gets hand-shaped, petal by petal, then set aside to firm up. It takes longer than people expect. Longer than I expect, some days.

Second clip is these same little flowers, finished, sitting on cupcakes like they never spent an afternoon drying on foam in the kitchen. Funny how much quiet work hides behind something that looks simple.

Orange, yellow, lavender — quite a bright palette, and that's exactly why I said yes to it!

Each flower here started as a ball of gum paste and a cutter, then hours of shaping, veining, and dusting before it ever touched the cake. The bright ones are sometimes trickier than pastels, actually — less room to hide a misplaced petal when the color is this saturated.

We usually get asked for soft, romantic pastels which are so beautiful. I also love a color story that doesn't whisper. We make these in whatever palette a couple brings us. Soft and quiet, or bold like this.

A cascade of sugar roses and even a few sugar blueberries tucked in make this cake special.

The bottom tier carries a soft blue marbling, quiet enough to let the flowers do the talking. Underneath the white finish is chocolate cake with hazelnut cream, so the delicate look outside hides something a little more decadent inside.

Every petal was built by hand, one at a time, until the whole arrangement felt like it had just been cut from a garden. Even the blueberries are sugar, which sometimes leaves people guessing "Are they real?"

Avenue Magazine's annual Best of Weddings Calgary vote is open, and thanks to all of you, Chartier is on the ballot again for Best Wedding Cakes. It's because of your support that we've landed in the top three a few years running now — which, for a studio our size, never stops feeling a little surreal.
