These bright and soft lemony cupcakes are topped with torched meringue. The cupcakes have fresh lemon juice and zest to give a flavourful tang. The torched meringue is sweet and soft and tastes similar to a roasted marshmallow.

Can I just say YouTube makes sugar cookies look SO easy and fast and fun!? I don’t make much for sugar cookies but every time I do I’m surprised at how long they take to create. Making the dough, cooling, cutting, baking, cooling, making icing, colouring icing, setting up different piping bags with tips, decorating..letting the decorations set to then do more decorating! Phew, they didn’t turn out perfect but it was fun and tasty!
