We are spotlighting each of our current Mac & Cheese menu options, and today is the BBQ Pulled Pork! It starts with a bone-in Berkshire pork butt from , and it is lovingly (but not too lovingly!) rubbed with the Holy Apostle of Meat spice mix from .ca We then smoke it at till it’s probe tender, let it rest, and hand shred it. We use our orange cheese sauce for this dish, which consists of 7 year aged cheddar, Emmental, Gruyere, and fresh cheese curds, all of which we procure from Mr Cheese himself at . We use our house made barbecue sauce to coat the pork when preparing this mac and cheese. For assembly, we start with our soon to be famous cheese bowl, and give it a sq**rt of our maple Sriracha sauce, warm our perfectly el dente macaroni, and toss them in the cheese sauce till each one is coated. Once the ideal coverage has been achieved, we add in our sauced pulled pork, and toss it as well. Everything is then added to the cheese bowl, and our coleslaw is placed on top of the already overfull cheese bowl, and we add another sq**rt of our maple Sriracha sauce to finish the whole thing off.
