Just wanted to say a quick hello to all my new followers and thank you so much for being here. I operate a micro bakery in the Crowsnest Pass. We are right in the heart of the Rocky Mountains, along the BC/ Alberta border and about 100km north of the Canada/ US border.

I've been working to perfect the craft of sourdough for several years now and I'm always learning new things. My goal here is to share what I'm doing in an artsy way. Hopefully share some tips and have fun. Please feel free to share your experiences and ask questions and I'll do my best to answer and bring you along with me on my journey. ✌🏼🤍

7 Grain Super Seed Sourdough

Autolyse
320 g water
100 g active starter
15 g honey
350 g bread flour
150 g 7 grain flour

Then add salt
20 g water
12 g salt

Grain Soaker
90 g super seed mix
130 g boiling water

Directions
1. Make the soaker the night before by pouring boiling water over grains and covering to soak.
2. Autolyse Mix:
- water
- starter
- bread flour
- 7 Grain flour
Rest 30–45 minutes.
3. Add salt and all of the grain soaker. Mix until incorporated.
4. Bulk ferment at room temp with 3–4 stretch and fold within the first 2 hours after mixing.
5. Shape into boule or batard.
6. Spray with water and coat with rolled oats.
7. Cold proof overnight in fridge (12-18 hours).
8. Bake in Dutch oven preheated to 475°F
475°F covered for 20 min
450°F uncovered for 25 min

The loaf that thought was going to flop... Harvest 7 Grain Super Seed Sourdough. Omg it's probably my favorite loaf yet. You've got to try it!
