Mmmmmmmmmm!!!!! Fudggggge🫠The entire time I was making this today I was telling myself it wasn’t working out well and even after pouring it into my pan and saying everything looked good, I still didn’t want to believe it. Gotta say some of the smoothest melt in your mouth fudge I have ever made. This is cacao fudge and a little tricky to get right, but some days that horseshoe that’s stuck up my hiney is turned just the right way. Today was one of those days. Next, cheesecake.

Started off my morning with a little leftover sourdough culture. I don’t always have the patience for sourdough bread, and this recipe works very well for using my leftover culture after doing a feeding.
Very simple.
I generally use whatever culture is left after feeding. This morning that was 306grams. I place that in the bowl of my stand mixer with the whisk attachment. Then I measure 1 cup milk and add 2 tbsp canola oil, 1egg, 1tbsp sugar, 1/8th tsp sea or pink salt. I combine this separately before added to my culture. Combine these ingredients well with 2 cups of flour. I then switch to the dough hook. combine 2 tsp baking powder with 2 cups of flour separately before adding to the mixer. Mix this until combined only before transferring to loaf pans. Bake at 375F for 25 minutes depending upon your oven. I normally line my pan with parchment paper.

Well! We have been very happy to see that our perogies are still popular. We are currently sold out until we get more pinching done. But, thankfully I enjoy pinching and am planning on some serious pinching tomorrow. Should be fun. I will put on some soft music(Iron Maiden or Ozzy Ozbourne) and meditate on the fundamentals of our universal transition and it’s correlation to the perogy making process. Ahhhh!!! That’s Zen baby!

i dreamt about perogies last night, but after pinching thirty dozen, it seems to have become a thing. Thinking of something simple next, maybe a matrimonial cake. Or maybe some buttertart squares, or better yet, some butter tarts. No, no, caramel fudge😍!Mmmmmmmm fudge.
Now I am hungry!🤔
