Not only is einkorn flour found to be lower in gluten and thus easier on the gut, but it may also help to enhance the composition of your gut. One study found that einkorn bread increased bacteria that produce short-chain fatty acids and increased the metabolic diversity of the gut. Short-chain fatty acids can help to maintain the integrity of the gut cells reducing permeability thus reducing the risk of toxins entering the bloodstream. It can also have protective effects on your immune system and reduce inflammation.

Einkorn wheat is NOT gluten-free. It’s still a wheat, and still contains gluten. However, some people claim that the gluten in Einkorn is different from modern grains with a more simple gluten structure, if you will, and some people who claim they’re gluten intolerant can tolerate Einkorn. There is an argument to be made for the simpler nature of Einkorn’s makeup resulting in its gluten structure also being more “simple” and easier to digest.

Welcome to the wonderful world of einkorn!
Einkorn is the original wheat, which means it's is not hybridized, or genetically modified. It is essentially what our our bodies are originally used to digesting! And because it isn't genetically modified it is structured differently then modern wheat, making it easier to digest; and most who have a sensitivity to gluten have been noted to not have a reaction to einkorn!
Einkorn is also high in protein and vitamin B and many other vitamins that are not found in modern wheat as commonly anymore.
