Fun Fact French Friday

The is something special about going to L'auberge de France: it lifts your spirits and primes your senses.

Last Friday Yvonne and I enjoyed lunch at L'auberge, Yvonne had Sous-chef Vibeke's heirloom tomato salad with feta cheese and toasted walnuts and I ordered a chicken salad sandwich with in-house mayonnaise, dill and Jean Marc's chicken ( sous-vide) , served on Boulanger Bill's brioche. It serves as lunch and dinner.

As we were eating , I noticed a sweet smoky fragrance emanating from the rear courtyard; Jean Marc was preparing salmon ( saumon fumee) Jean Marc uses cold-smoked and smokes his salmon for 6 to 8 hours over apple wood chips. He prepares his salmon with brown sugar and his secret herb rub.

I like the smoked salmon on a croissant with goat cheese, capers, dill, roasted peppers or fennel.

Although L'auberge may be perfume -free, on your next visit, please be aware of that special, smokey bouquet : it's not the wine or the flowers, it's the salmon.

Fun Fact French Friday,
L'auberge de France and it's building at 304 Front Street is a heritage building. Chef Jean Marc bought the building in 2008 with the intention of creating a Canadian's version of his restaurant in Avignon, France. However during Covid, he had to reimagine his menu and pivot to offering a wide range of his favourite dishes as frozen dinners.

L'auberge has maintained it's unique charm and warm atmosphere thanks to it's dedicated staff members and a unique team.

Connie Carson in her book, "Facades on Front" describes the L'auberge building as a three story architectural gem with it's red brick facade adorned with Victorian windows and segmental arches.

The brick building has housed many businesses , including a jewellery store and from 1931 to 1940, the home of Reddicks Bakery.

On Saturdays, boulanger Bill offers his fresh breads with the aroma and charm complimentary.

Fun Fact French Friday,

"Auberge" is the French word for a country inn and is now associated with fine dining serving regional food. Five hundred years ago, the old Provencal word "alberga" referred to an army camp, but over the centuries, auberge became a stop for travellers to find a bed and a warm meal.

L'auberge de France Inn is also a boutique B & B providing a unique and unforgettable French experience. The two floors above the bistro offer over 1500 square feet of luxury, including : two bedrooms, full kitchen , two bathrooms and a large living room-dining room,

When you read the reviews, virtually everyone comments on the spacious and beautifully decorated rooms, but above all, how the hosts were hospitable and kind. Jean Marc and Sheranda would never praise themselves, but I can share how people have complimented their attention to detail and their caring , not to mention the smell of freshly baked bread.

Fun fact, French Friday,

 Café is the French word for both coffee and coffee shop . throughout the Mediterranean, cafés sit beside the Piazza, the Esplanade the Agora , the town Square or a la place and people gather from early morning to late in the evening to socialize and share experiences. No grab and go.

 Yvonne and I break all the rules by ordering lattes and cappuccinos in the afternoon, but L’auberge oblige’s with a smile,

 Whether you order one or two shots of espresso, the milk foam gives an airy velvety texture. The espresso is a small cup of coffee, extracted under very high pressure.

L’auberge  orders their coffee beans from Balzac Coffee  and it is specifically roasted for them ,  you can select a bag and have it ground for your liking for coffee at home.

L’Auberge  coffee is 100% Arabic and the blend profile is medium to dark to deliver rich, low acidity, chocolatey , or nutty flavours under a high pressure with freshly ground beans.

 so if your choice is Americano, Macchiato , Cortado, Flat white, or Mocha welcome to L’auberge !
