🍫🎂 Ed's 70th Birthday Cake 🎂🍫

Ed is a chocolate guy, which means he's automatically my favourite type of person. 😂

For his birthday, I made a rich double chocolate cake layered with chocolate buttercream. I used strong brewed iced coffee in the cake batter to enhance and deepen the chocolate flavour without making the cake taste like coffee.

And yes, I had to put some berries on top because once you look at this cake on a nutrition chart, there is some guilt involved in each slice. The berries make it basically a health food.

But you know what? You only turn 70 once. That's a pretty big accomplishment, and I was honoured to make him a chocolatey, fudgy, completely over-the-top birthday cake to celebrate it. 🤎

My nieces gave it a very firm 10/10, so you know it's good.

🏅☀️ A Little Olympic Summer Cake ☀️🏅

When my friend told me she was throwing an Olympic-themed summer party, she asked me to make the cake for it. Obviously, I took that very seriously.

Three layers of soft French vanilla confetti cake, layered with Italian meringue buttercream. The softest, silkiest buttercream and easily one of my favourites to pair with vanilla cake.

It takes a little extra time and some careful temperature control to bring all the ingredients together, but the result is so worth it. No gritty texture and nothing heavy, just a light, smooth, buttery vanilla frosting that's perfect if you're not a fan of a thick or overly sweet buttercream.

For the decorations, I used my leaf tips to pipe the flames coming from the gold-dusted ice cream cone torches, added white chocolate lettering, and finished the sides with Olympic rings wrapping around the cake.

At the point of pick up, I assumed the cake was officially an athlete and would be competing in the Games.

Apparently, only people are allowed to compete. Which feels like a pretty big oversight because, if you ask me, this cake could've placed. 🥇

🐾🤍 Thank you for supporting The Barkery Box! 🤍🐾

I just wanted to say a huge thank you to everyone who ordered a box, shared the posts, sent me pictures of your dogs, or even just followed along with Zeus's story.

Because of your orders, I was able to put together a donation for Whitby Animal Services: bags of cat food, dog toys, and cat toys. I spoke with the shelter ahead of time to find out what they were currently looking for, so I could bring along things they needed.

It means a lot to me that something I started as a little way to celebrate Zeus ended up being able to give something back to the shelter that gave him his second chance.

Two years ago, we brought home this shy, timid Great Pyrenees who had been found abandoned on the side of the road. Now he's the biggest personality in the house and somehow the mascot of a bakery.

He's come a pretty long way. 🤍

Thank you for helping me celebrate Zeus and for helping me give a little something back to the animals still waiting for their own happy ending.

And thank you, Zeus, for contributing absolutely nothing except approximately 14 pounds of fur and a lot of entertainment. 🐾

🍪🌊 Hearth Chocolate Chip Cookies — Mini Edition 🌊🍪

A custom order of 75 mini Hearth Chocolate Chip Cookies for a family BBQ on the lake.

I was given some creative freedom with the design, so I went with something lightly nautical:

🎣 Candy fish
🫧 Pearl bubble sprinkles
🔴 Bobbers
🍫 Chocolate icing
🩵 Baby sea-blue vanilla buttercream

The cookies themselves are buttery, chocolatey, and just a little bit salty — and the mini size made them perfect for a summer gathering where there are already about twelve other things to eat.

Custom orders are open for cookies, brownies, cheesecakes, cinnamon buns, banana bread, cupcakes, dessert trays, and other sweet ideas.

🔥🤎 S'mores Blondies 🤎🔥

She is the S'mores Brownie's cute blonde sister.

A brown butter blondie loaded with chocolate and graham crackers, sandwiched with toasted marshmallows for that classic campfire flavour.

Soft, gooey, buttery, and just a little bit messy.

🐾🤍 Meet Zeus 🤍🐾

Every August, we celebrate Zeus.

Two years ago, he was found abandoned on the side of the road in the middle of summer. We don't know where he came from, what his name was, or what his life looked like before he found his way to the Whitby Animal Services shelter.

What we do know is that when he came home, he was shy, quiet, and unsure of everything. It took nearly four months before we started to see the dog he is now.

Now he's almost always upside down asking for belly rubs, somehow manages to take up an entire king-sized bed, supervises absolutely everything happening in the house no matter how small the task, and has enough fur to knit several more Great Pyrenees.

To celebrate Zeus's gotcha month, I'll be introducing 🐾The Barkery Box🐾, available for pickup on August 9 and August 16.

A portion of every Barkery Box sold will be donated to the shelter that gave Zeus a second chance. And if you send me a photo of your dog and share this post, I'll include a complimentary homemade dog treat with your order.

It's a small way to celebrate one very good boy while helping more cats and dogs find loving homes of their own.

(Feel free to say hi to Zeus in the comments. He probably won't notice, he's busy watching the neighbours through the front window.) 🐾🤍

A huge thank you to everyone who ordered a Campfire Box this week.

It still feels a little surreal that something that started as a fun side project has people trusting me to bake for their celebrations, family get-togethers, and long weekends. Seeing your names come through the order form and packing everything up was a pretty cool feeling.
