For the very first time, I’m bringing to Belize the essence of Parisian artistry — the precision, the timing, the delicate balance of texture and flavor that define true French patisserie.
This journey began at École Ferrières in Paris, where I learned not only the techniques of pastry, but the discipline and love it takes to master them. At Château Ferrières, every detail mattered — from the rise of a choux to the sheen of a perfect glaze — and that pursuit of perfection has followed me home.
Back in Belize, I’ve spent the past two years adapting every recipe, every technique, to our tropical climate — ensuring that each pastry still holds its structure, each bite its balance, even under our Belizean sun. It has been a challenge of patience, precision, and passion — and now, it’s finally ready to be shared.
