𝐹𝓁𝑜𝓌𝑒𝓇 𝒢𝒶𝓇𝒹𝑒𝓃

It's cakes like this that make me love what I do. I am absolutely in love with this cake 🥰. Every morning, I would wake up and look at my workstation and see the flower garden that was my desk and it would just make me so happy all day. I was icing my hand all week, but it was so worth it!!

We transported this cake from Hopkins to Belmopan. It had to be stacked and decorated on site 😳 It doesn't matter how prepared I am and how many plan BCDs I have set in place...I still am a stressed out mess during any delivery with the cake as important as any wedding cake 🤪🤣

This cake is three tiers of a vanilla chiffon cake with a buttery caramel filling wrapped in a vanilla Italian meringue buttercream.

I! LOVE! MAKING! SUGAR FLOWERS! It's cakes like this that get me lost in the details. I could stay up all night, every night making cakes like this 😍

𝑪𝒂𝒌𝒆 𝑫𝒆𝒕𝒂𝒊𝒍𝒔

The bottom tier of this cake is a vanilla chiffon cake with fresh strawberry compote filling. The top tier is a red velvet with cream cheese filling. Everything including the teacup are handmade and fully edible. Decorated with Macarons, roses, lilacs and daisies. And of course, they were matching cupcakes in a banana caramel and a chocolate Nutella Roche.

This wedding cake was a lot of fun to make. I got to work with different materials like isomalts to make the seaglass, as well as hand piped and brushed all of the buttercream waves. Not only did I get to work a different materials, but the bride also requested some different flavours that I don't normally do so testing. Those were a lot of fun 🤤

The bottom tier of this cake was a moist chocolate cake with a buttery caramel filling. The third tier was a classic vanilla chiffon cake with meringue buttercream. The second tier was a pistachio cake with a cream cheese, buttercream, and raspberry compote filling. Finally, the top tier of this cake was my take on classic Cassata cake, vanilla chiffon cake brushed with amaretto syrup, ricotta and lemon zest and finally a strawberry compote.

My middle munchkin turned 6 this weekend. For obvious reasons, my kids love planning their birthday cakes and they are not shy about what they want. And I really love making their cakes because I get to try different things that most people don't request, if anything goes wrong I can change the design without approval 😂, and I don't need to worry about stability structure. I would never deliver this cake fully complete in a million years with Belize's winding roads, speed bumps and heat. But this cake didn't even have to even go down a set of stairs lol

The bottom tier of this cake was a chocolate cake with a buttery caramel filling. The middle tier was a traditional carrot cake with raisins and roasted walnuts with a cream cheese filling. And the top tier was a classic white almond cake with a fresh mango and strawberry filling.

Dusting my florals is my favourite part by far. Just a tiny bit of depth as life to all of them. All of the tiny little details that I obsess over that 99% of people don't notice, still adds to the overall impression. The veining, the dusting, the pollen when you catch a glimpse of the inside of the flower... I get lost in the details.
