INGREDIENTS
Tart Shells
250 g all-purpose flour
125 g cold butter, cubed
100 g sugar
1 egg
Zest of 1 lemon
1 pinch salt
Lime Filling
400 g condensed milk
120 g fresh lime juice
2 whole eggs
2 egg yolks
Lime or lemon zest
Decoration
Whipped cream or Italian meringue
INSTRUCTIONS
Mix flour, sugar, and salt in a bowl.
Rub in cold butter until crumbly.
Add egg and lemon zest, then mix into a smooth dough.
Wrap and chill for 30 minutes.
Roll dough to 3 mm thickness and line mini tart molds.
Prick bases with a fork.
Bake at 170°C (340°F) for 12–15 minutes until lightly golden. Cool completely.
Whisk eggs, egg yolks, and condensed milk until smooth.
Stir in lime juice and zest until creamy.
Fill cooled tart shells with the lime mixture.
Bake at 150°C (300°F) for 12–15 minutes until just set.
Cool completely and refrigerate for 3–4 hours.
