Jilapi: It actually started in Persia as Zulabiya- golden, fried, soaked in honey or syrup, sometimes flavored with rosewater and saffron . Around the 10th-15th century, it traveled into India, twisting and turning until it became the jilapi we all know and love. By the Mughal era (16th–18th century), it was already royalty-approved, starring in imperial kitchens and festive feasts ✨. Sanskrit texts like Gunyagunabodhini from the 15th century even mentions it as a favorite treat.Across the world, it goes by different names: Zlebia in North Africa, Jerry in Nepal, and Zulabiya in Iran during Ramadan. From kingly delicacy to your go-to 50-taka street packet—Jilapi's glow-up is legendary.

Ultra-moist sponge cake drenched in a blend of evaporated milk, condensed milk, and heavy cream—yep, that’s where the name “tres leches” comes from: three milks.
Now, while it’s a favorite all across Latin America, its exact origin is a bit of a mystery. Most people trace it back to Mexico, around the 1930s or 1940s, when Nestlé began printing a “tres leches” recipe on the back of their canned milk labels. It was smart marketing—and honestly, a delicious gift to home bakers. The idea took off and started spreading from kitchen to kitchen across the region. The concept of soaking cake in a liquid isn’t new. Think of English trifles or Italian tiramisu—both involve layers of cake absorbing cream or coffee. Tres leches took that European tradition and turned it into something uniquely Latin—with bold sweetness, rich flavor, and a comforting texture you don’t forget.Over time, every country gave it its own twist. "Shahi Tukra – A Dessert Fit for Emperors"

Let me take you back a few centuries—imagine the grand Mughal courts, the scent of saffron in the air, and silver platters of decadent food laid out before royalty. That’s where Shahi Tukra was born.
This isn’t just any dessert. It's said that Shahi Tukra was crafted in the imperial kitchens during the Mughal era—most likely in Hyderabad or Delhi, where the Mughal influence on cuisine was especially strong. The idea may have originally traveled from Central Asia or Persia, where similar milk-soaked bread desserts existed, and then evolved in India into something uniquely lavish.
So maybe a royal chef, staring at leftover bread, thought: why waste it? And transformed it into something extraordinary. Think of it as the royal version of bread pudding, with fried bread soaked in sweetened milk (rabri), perfumed with cardamom, and topped with a rain of pistachios and almonds.
"Shahi" means royal, and "Tukra" means piece. And honestly? It does feel like you’re biting into a royal piece of history. Rich, creamy, and unapologetically indulgent—this dessert was made to impress kings. No wonder it's still a favorite during Eid and special occasions.

The History of Cheesecake✨

Cheesecake’s roots go way back in history, and its evolution is as rich as its flavor!
It all started in ancient Greece, around 2,000 years ago. The Greeks were the first to create what we know as early cheesecake. Made with simple ingredients like cheese, honey, and wheat, it was actually served to athletes during the Olympic Games as an energy-boosting food. The Greeks called it Plakous, and it was the beginning of a dessert that would eventually span centuries and cultures.
When the Romans took over Greece, they adapted the recipe, adding eggs to the mix and making it a popular treat at their feasts. This Roman version was similar to the one we know today but without the creamy texture we love.
Fast forward to the Middle Ages in Europe, where cheesecakes became more refined and elaborate. However, the cheesecake we recognize today didn’t take its true shape until the 19th century. In 1872, William Lawrence, a New York dairyman, accidentally invented cream cheese while trying to make a different type of cheese. His creamy, smooth cheese quickly became a key ingredient in what would become the iconic New York-style cheesecake.
Speaking of New York, the city’s version of cheesecake—known for being dense, creamy, and often set on a graham cracker crust—became famous in the 20th century, especially thanks to famous bakeries like Junior’s in Brooklyn.
From ancient Greece to modern New York, cheesecake has come a long way! It's a dessert with a rich history, and each bite carries centuries of tradition.
