★ ময়দা, কোকো পাউডার, বেকিং পাউডার ও সোডা ছাঁকনি দিয়ে নিন যাতে কেকের টেক্সচার মসৃণ হয়।

★ ডিম ও চিনি ফেনাযুক্ত ও ক্রিমি হওয়া পর্যন্ত বিট করলে কেক নরম হয়।

★ ডাবল বয়লার মেথডে চকলেট ও মাখন গলিয়ে মিশ্রণে যোগ করলে কেক ফাডজি ও আর্দ্র হয়।

★ গরম পানি বা দুধ দিয়ে ব্যাটার পাতলা করলে কেকের ময়েশ্চার ঠিক থাকে এবং ভালোভাবে বেক হয়।

★ ময়দা মেশানোর সময় বেশি না মেশালে কেক ফ্লাফি ও নরম হয়।

★সঠিক তাপমাত্রায় বেক করুন। সাধারণত ৩০-৪০ মিনিট বেক করলে ভালো ফল পাওয়া যায়।

★ ফ্রস্টিং বা গানাশ তৈরিতে ডার্ক চকলেট ও হেভি ক্রিম ব্যবহার করলে স্বাদ ও টেক্সচার উন্নত হয়।

★ কেকের স্বাদ বাড়াতে কমপক্ষে ৩-৪টি কমলার জেস্ট এবং সমপরিমাণ তাজা জুস দিন।

★ ডিম ও চিনি ৫ মিনিট পর্যন্ত হালকা ও ফেনাযুক্ত হওয়া পর্যন্ত বিট করুন, এতে কেক হবে নরম ও হালকা।

★তেল বা মাখন ধীরে ধীরে মিশিয়ে নিন যাতে ব্যাটার মসৃণ হয়।

★ময়দা ও বেকিং পাউডার ভালো করে ছাঁকনি দিয়ে মেশালে কেকের টেক্সচার ভালো হয় এবং লাম্প কম হয়।

★ ময়দা মেশানোর সময় বেশি না মেশানোর চেষ্টা করুন, এতে কেক ঘন ও শক্ত হবে।

★সঠিক তাপমাত্রায় বেক করুন, কেকের মধ্যে টুথপিক ঢুকিয়ে দেখুন পরিষ্কার বের হলে কেক প্রস্তুত।

★কেকের স্বাদ বাড়াতে ক্রিম চিজ ফ্রস্টিং বা গনাচে অরেঞ্জ জেস্ট ও জুস মেশানো যেতে পারে।
