𝗪𝗜𝗡𝗧𝗘𝗥 𝟮𝟬𝟮𝟲 collection during her residency at where she stayed to finish her book…

On the last evening of her residency a parade of women gathered to read words and eat cake … and I can’t think of a better way for the soft launch of our latest collection.

I am very excited to read more and for the book to come out… and in the meantime please enjoy some of the words Tess wrote...here’s a poem about cake.

The 14th century recipe cake, simplicity and mediocrity… and the cake that has a story to tell…

In the past she used to be made only for very special occasions, due to the high value of its ingredients…

Brides used to make her to impress their husbands to be, and I love her especially for weddings and engagements.

We were passed on the original 14th century recipe from the custodians of the small Mediterranean town where she originates from and I haven’t changed a single thing.


This is what they say about her …

“She boasts a very different flamboyance and must have drawn its inspiration from the Viennese Sachertorte. She is a bold version resulting in an even better cake. The Viennese original is replaced with an extravagance of flavours where the marmalade is substituted with honey, an abundance of walnuts, and hardly any flour, as well as rose petal liqueur and a generous chocolate glaze.’

One of the most common questions: why we don’t use dairy, especially butter in our desserts?!

“Butter is so good for you”

In short, so we can eat more!

There’s nothing worse than not being able to have another slice of cake (in our opinion).


Nothing against dairy, if it’s organic and biodynamic… and if you can handle it.

The main issue I personally have with butter is it’s high kcal density. A good old cake requires a loooot of butter, both sponge and “frosting”.

Frosting that has a lot of butter, requires a lot of sugar, and you know how we feel about sugar.

All together creates a high kcal density dessert = a feeling we’re not very fond of, and the main reason why kids mostly feel “sick” after having a cake.

Inhaling + 400 kcal of fat and sugar (stripped of fiber) in one sitting often after a meal will make you feel sick-ish. And people actually praise us for the opposite.

We love our cakes light! So you can have more!!

Anyway, nothing against dairy and a little bit of butter 🧈 on a warm bread…

We create mindfully, slowly...in the moment and truly aware of the
the impact our creation will have on your health and wellbeing.
..and for this reason we never ever have “spare’’ cakes waiting around (god forbid) nor we are able to offer a last minute cake.
