Growing up in a small village in the South of Germany, the local bakery, 'Bäckerei Mangold', has always baked the best pretzels, rolls and, of course, rustic bread. A highlight of the week was Saturday morning when Mum would go to the bakery early and we would all enjoy freshly baked rolls and pretzels for breakfast. Every Saturday morning.

To this day, I love pretzels for breakfast, pulling them apart and enjoying each piece with a lashing of butter. So simple. So delicious.

This afternoon’s experiment: trialling gluten-free burger buns.

Quite happy with them for a first go. Taste is excellent, but they need a little more lift, so will play with the flour combo a bit more.

All that said, my burger with chipotle mayo, barbecued halloumi and homemade slaw went down a treat 💜

It is my gluten-free light ‘white’ loaf, which I have just made even bigger! It’s now a 1-kg loaf.
