Inside was white chocolate mudcake, homemade passionfruit curd filling with vanilla Swiss meringue buttercream.

My white chocolate mudcake recipe has a special place in my heart as my mum made this for me every birthday when I was younger (at my request). It is still sooo moreish and my partner and housemate nibbled at the offcuts all through the week because it is just THAT good 😍 have you tried my white chocolate mudcake yet? When an old friend came to me with a request for tropical cupcakes, I instantly had this colour scheme in mind - yellows, pinks and greens with scattered flowers. When I dropped them off she admitted she didn’t know how all of those colours were going to work together but I’m really glad she trusted me to bring them together! Here they are in their tropical glory: coconut cupcakes filled with handmade passion fruit curd, topped with vanilla swiss meringue buttercream and fresh organic edible flowers.

They say there’s a first for everything and, well….today was the first time I had to break into someone’s house to deliver their cupcakes 🤣

My order was a surprise delivery.. turns out the surprise was that no one was home! 😂 After liaising with my customer who organised the surprise for her friend, we decided that the best option was to slip into the side door (which was visibly open) so I could place the cupcakes inside where they would be protected from the heat until they got home. All was well and they loved the cupcakes but you have to laugh at how unorthodox this delivery was 🤣😂
