You voted so here it is 😋 Banana cake with almonds. Just the right amount of sweetness. The perfect accompaniment to a cup of good coffee ☕️
Ingredients:
2 large ripe bananas (use 3 or 4 if small)
85g sugar (I used 30g of caster sugar and 55g of brown sugar)
Pinch of salt
2 large eggs
1tsp vanilla extract
1tbsp vegetable oil
2tbsp Greek yoghurt
1tsp baking powder
1tsp baking soda
200g self raising flour
1/2 cup roasted almonds (optional)
* walnuts work great too but I had none. You can even add some chocolate chips or sultanas) 😋😋
The how to:
1. Using a fork mash the bananas.
2. Add eggs, vanilla extract, sugar, oil and yoghurt and mix really well with fork.
3. Mix flour, baking soda and baking powder together and add to egg mixture.
4. With a spatula, gently fold together until all combined. Don’t over mix.
5. Pour into a well greased baking tin (I used a 7inch round one) and bake at 170 degrees for approx 30-35 minutes until cooked through.
I added a sprinkle of cinnamon in mixture before baking and once cooled dusted with icing sugar and cinnamon for that extra sweetness 😍
