Luigi Stivaletta the coach can absolutely boast a renowned pedigree of 25 years experience in sophisticated baking and pastry that has seen him enchanting many customers at some of the Sydney’s best fine dining venue. He is currently sharing his prestigious knowledge with his students as a Lecture Chef at the prestigious institute TAFE NSW. Luigi said that teaching brings out his best and when he received the offer of coaching the Australian pastry team, he couldn’t refuse.

Last but not least meet Emmanuel Lottefier! Emmanuel found his passion for patisserie at a very young age, growing up and learning his craft in Brussels, Belgium the chocolate capital of the world. Studying over a period of 5 years he became competent in the areas of patisserie, chocolate, confectionery, bread and sugar artistry. We look forward to having him on the team!

Check out Gabriella Adeline, the next team member! Gabriella had always had an interest in food but never considered it a career option. It wasn’t until she was in university that she realised she wanted to study pastry and share her passion with others through the products she makes. Whilst the chance to represent Australia in Milan is a great honour, she looked forward to learning from chefs within the industry. We are thrilled to have her on board and can’t wait to see what she creates!

Meet the first member of the team Jo Barrett! Jo grew up in Melbourne and can’t remember a time when she didn’t love cooking. As an award-winning apprentice, Jo studied in Canada in 2007. Jo draws her inspiration from Australian Native ingredients and the natural beauty that surrounds her current location, Oakridge Winery in the Yarra Valley. As co-executive chef (with Matt Stone), Jo strives to minimize waste, employing creative methods to get the most from every ingredient. We are so happy to have Jo joining us in this journey!

YOU ARE INVITED! It is our honor to invite you to be a part of the professional organization making up the FIP Federazione Internazionale Pasticceria Gelateria Cioccolateria (FIPGC). ABOUT FIPGC - Worldwide, we are 5000 members strong. We are convinced that with your participation we could reach high heights in the international scenario. FIPGC is an association whose fundamental works are to carry out activities inherent to the development, knowledge and experiences typical of confectionary internationally understood as confectionary art. It also plays a role in the development of the activity of bakers, ice cream makers, chocolatiers, cooks, sculptor/artists on a national and international level with the aim of ensuring the defense of social and professional values, morals and also to improve the prestige and image of the whole category. The association has as its purpose the professional formation, organization of events and fairs, the promotion and development of the handicraft sector typical of every nation.

WHY BECOME A MEMBER - Benefits include being an approved member to wear our official FIPGC Chef Jacket proudly, helping us to divulge our image and giving credibility to your art, accredited classes and events, and international exposure, recognition and networking opportunities within our social media outlets and Pastry Magazine. THE 2 WORLD CHAMPIONSHIP - The FIPGC manages and organizes the two World Championships at the Host Fiera Milano, Milan, Italy: “The World Trophy of Pastry Ice Cream Chocolate” “Cake Designers World Championship” They are events that take place every two years at the Fiera Milano during the Host event. Our goal is to organize these events more and more seriously by selecting the participating countries through international selections. ABOUT EUROQUIP - For these reasons, we thought to establish our Oceania Chapter FIPGC supervised by Euroquip (www.euroquip.com.au), our official partner. Euroquip are importers and distributors of high quality, Italian-made catering equipment for the foodservice industry. In 2019 we intend to develop our membership. Subscribers benefits will be:
