I'm always saying that food is more than the nutrients it contains. It is part of our culture, our social interactions and our joy in life.
Bread is often a shunned food today, based on the notion of labelling it 'a carb' instead of as a whole food. Let's stop doing that. Humans have eaten bread for at least 10,000 years... and obesity became a problem in the last 50. It's not bread that is the problem.
Certainly there are nutritional differences in the vast array of breads available - and I recommend choosing wholegrain varieties, with sourdough being an especially good choice.
But bread is rarely eaten alone... and it matters what goes with it. It is a key component in traditional diets around the world and the origins of the word company (and companion) show how rooted this food is in our human connections.
