You know what I hate? Spending $6 and wasting 1000 calories on eating a crappy cupcake. I made the mistake of buying a store bought cupcake the other day - from a big cupcake bakery, mind you - and it was......not good. The cake was completely flavourless (it was my favourite vanilla) - more like a packet vanilla cake that is super spongy. I could see they were relying on the buttercream to save it, but all I got was a mouth full of grainy, sugary creamed butter that stuck all up in my business and made my teeth hurt. It was such a sad experience. There was no love. I could taste cheap ingredients, preservatives, and no vanilla whatsoever. It showed me how well I do a cupcake. It showed me how much difference it makes using high quality, organic ingredients such as my eggs, butter and milk that I drive an hour out of Sydney for each month, where I can see the happy, fat, natural living animals that my produce comes from. It takes me three goes to crack those eggs, the shells are so healthy and strong. If you are going to eat cupcakes, make sure they are delicious enough to enjoy so much that you don't care about the calories. If your kids are going to eat cupcakes, make sure the ingredients are as fresh and organically produced as they can be. Mine are
