Wonderfully delicious rice cakes that are cooked in between coconut charcoal produces a beatifully airy, slightly sweet dessert that you just keep coming back for.

Founded through the sheer boredom of the complete lockdown and isolation in Sydney brought on by the Covid-19 pandemic in 2020, I decided to utilise my skills and knowledge as a pastry chef and started selling homestyle cakes and sweets.
My name is Francesca and I have been a Sydney based pastry chef for the past 10 years.
I have trained in a variety of different places around Sydney including Westin Hotel Sydney CBD (Now Fullerton Hotel) and Sydneyโs Best Artisan Chocolate Shop, Kakawa Chocolates Sydney. And for the past 10 years I have worked in various hatted restaurants and groups across Sydney working with the most talented chefs (Felix by Merivale, Tapa Vino Group, Lotus Group, Tetsuya).
Recently I decided to finally share my creations with the public and will be breaking into doing weekend markets starting September 2020 but until then, we will be catering to Sydney locals and surrounds!
So what is behind our name โCake Storiesโ ?
โGrowing up in a filipino household, i have had endless birthday cakes from goldilocks and red ribbon which are chiffon based cakes that always brings me back to my happy childhood. chiffon cakes are sponge style cakes which are moist and more creamy in the palate. they were always the classic flavours, mocha, ube, coffee, chocolate, slathered with buttercream and decorated with sugar flowers.
โAs I've grown up in multicutural australia, i've found myself constantly being challenged to different tastes and flavours โdifferent to what i was used to as a kid. an experience only to be heightened through my training as a chef and as a product of my avid travels around the world. So I thought, what a great idea to combine every single thing that has inspired me all my life! if you ask me every cake that we produce is inspired by somebody, an experience or a story.
Which brings us to my philosophy as a pastry chef.
There is nothing worse than having a dessert that is overkill with sugar and is consumed as 'wasted calories'. a dessert should have a great balance in flavours. Comparable to reading a great novel, it should take you on a journey, provoke a sense of nostalgia , inspiration, muster all kinds of emotions, pleasure & happiness.
