Seventy years ago, Meals on Wheels began delivering food to older Australians who needed it. To mark the anniversary, they wanted a cake worth remembering. Not just in flavour, but in purpose. They called on Christopher, whose work you know from this counter and from the strawberry watermelon cake that put Black Star Pastry on the map. Working with a team of researchers and nutrition scientists from UNSW, he developed the Unforgettable Cake. A cake made entirely from ingredients linked to brain health. Beetroot for blood flow. Blueberries for essential nutrients. Olive oil is associated with reduced dementia risk. Honey as a natural sweetener with anti-inflammatory properties. The result was something that tasted like a celebration and quietly said something important about how we feed and care for the people we love as they age.

Good bread is for everyone. We worked hard to make sure our gluten free options taste like a genuine choice, not an afterthought.

Getting gluten free bread right is harder than it sounds. The texture, the crust, the crumb that actually holds together. We kept working at it until we were happy with what came out of the oven. The result is bread that happens to be gluten free, not bread that reminds you of what you're missing.

This is the prosciutto, bocconcini and warrigal pesto baguette coming together. This beauty sits alongside other sadwiches including our bacon and egg roll with bush tomato relish, a cured lamb baguette with vintage cheddar and house-pickled karkalla, a beetroot and wild rice ciabatta, and a chicken sandwich with avocado, pickled beetroot and native thyme. Dinner at Hearthe is built around ingredients that don't often share a table. Truffle and chicken liver. Paperbark-smoked barramundi with warrigal greens. Kangaroo tail slow-cooked into a wattleseed ragù. Native thyme resting on burrata.

It's food that takes its cues from the Australian landscape, plated with the same care Christopher brings to everything else at Hearthe. The menu changes with the seasons, so what you taste tonight is a moment in time.

Christopher will be at The Little Food Market this month, and we couldn't be more excited to share what he's been working on.

For years, the Strawberry Watermelon Cake has been one of the most photographed desserts in the country. It started at Black Star Pastry, travelled the world, and became something of an Australian icon. Now Christopher is bringing a new chapter to that story: Strawberry Watermelon Cake 2.0.

Across three days at Carriageworks, he'll take to The Stage to talk through how the cake has evolved, why native ingredients, seasonality and thoughtful pairing matter more to him now than ever, and how something so familiar can still surprise people. There will be tastings at every session, so you can taste the evolution for yourself.
