I didn’t expect this, but I feel sad being away from my business in Tasmania. It means that I’ve been really enjoying making bread, meeting you guys, and all the little chats we’ve had.

Fresh bread and pizza dough will be available to order starting from the 20th of July. I am very excited; I’ve taste-tested the pizza dough and I guarantee that you don’t have to eat cardboard pizza anymore.

Also, this is big news! I am now fully standing on my own two feet with my business. I left my casual job and I want to focus on my business full-time.

Modern bread has taught us to associate softness with freshness and quality. But softness alone does not tell the full story of bread.

Many industrial breads remain unnaturally soft through additives, emulsifiers, shortened processes, and controlled production systems designed for consistency and shelf life. Texture becomes engineered for expectation.

Real bread behaves differently. Fermentation, moisture, starch structure, and ingredients continue changing even after baking. A naturally fermented loaf may become chewier, firmer, or drier over time—not because it is lower quality, but because it is less manipulated.

I believe quality should not only be judged by softness, but also by digestion, nourishment, ingredients, and how our body responds afterward.

Sometimes resistance, texture, and irregularity are signs that something remained closer to its original form.
