Gluten-free recipe testing day at Wish Upon A Cake! 😊

I’ve been working on a new gluten-free sponge recipe and was thrilled with how these cakes turned out.

One of the biggest challenges with gluten-free baking is achieving a light texture while still maintaining enough structure for layering and decorating. This trial ticked both boxes beautifully.

The finished cake was assembled at home with the help of some enthusiastic junior helpers (Granddaughters) and plenty of taste-testing along the way!

Recipe testing is one of the less glamorous parts of cake decorating, but it’s always exciting when a new idea shows promise.

I think this one might be a keeper. ❤️What do you think?
