Watched MKR last Sunday. The contestant served Carrot Cake with Pineapple and Ginger for dessert. Judges Verdict: Dry, can't taste the ginger, can't taste the pineapple.

That inspired me to make my version of the Carrot Cake. With Pineapple, toasted Coconuts and Cinnamon, frosted with Cream Cheese and decorated with Buttercream Carrots for Sonja Andanova's Coffee and Tea with friends. The Girls' Verdict: AMAZING
