Sunday lunch dessert, ‘brazo de gitano’ filled with cream and home made mango jam.
Extra thick, extra spongy, wonderful recipe by with a little twist, half of the flour is rye 😉.
Postres de domingo, brazo de gitano relleno de nata con mermelada casera de mango.
Extra grueso, extra esponjoso y con un pequeño cambio, la mitad de la harina es de centeno semi integral.

There are lots of Easter sweets in Spain, depending on the region, but torrijas are all over the country.
Kind of French toasts coated in sugar and cinnamon after frying.
Traditionally made with stale bread, it has to have a tight crumb, or you can bake your own, like me 😉.
Semana Santa y no faltan las torrijas.

No sugar, only honey as a sweetener.
Delicious and very simple to make. Half of the flour is wholemeal spelt.

Magdalenas de plátano y miel.
No llevan azúcar, pero sí miel como endulzante. La mitad de la harina es espelta integral.
Muy fáciles y muy ricas si no te gustan los dulces muy dulces.

Weekend baking.
Close to 50% freshly milled rye and Scout wheat with a handful of lineseeds.
Same day baking, no scoring, bread opening naturally.
Fin de semana, hay que hacer pan.
Casi la mitad de la harina es centeno y trigo Scout recién molido con un puñado de semillas de lino.
Amasado y horneado en el mismo día, sin retardar.
Sin greñar, como el pan de payés.

Dough has some freshly milled rye that gives it that special color and wonderful taste.
Instead of frying the onions for the filling I roasted them in the oven.
Empanada de atún con cebolla asap en el horno.
La masa lleva un poco de centeno recién molido que le da un toque extra de sabor.

It’s been a while (too long, in fact) since I baked with flour and what a pleasure it is, dough is beautiful and taste is amazing.
10% freshly milled Yecora wheat from
90% Hellfire from
Hudration? Somewhere between 75 and 85%, I was addin water as I felt it needed 😅.
Just sourdough.
Hacia mucho que no compraba las harinas de Tuerong, y qué gozada de masa, y el sabor increíblemente rico.
Que suerte poder tener estas harinas tan cerca.
10% trigo Yecora recién molido
90% harina Hellfire de Tuerong
La hidratación no está claro, empecé con 75%, como siempre, y fui incrementando según me@parecía que la masa lo necesitaba.
Solo mm, amasado y horneado en el mismo día.
