Meet Gabriel ✨

Gabriel joined the Inner West Swedish Baker team in November 2025 and has quickly become an important part of our farmers market crew 💙💛

You’ll find him behind the scenes helping with the logistics of our markets, and out front serving our loyal customers and sharing the bakery goodness.

When it comes to fika, his favourites are our sourdough croissants and triple choc-chip cookies — "they're perfect because they're simple." 🥐🍪

Outside of the bakery, Gabriel enjoys reading, dancing, camping, hiking, cooking and playing video games. Whether he’s exploring the outdoors or enjoying a quiet afternoon with a good book, he’s always up for a little adventure ✨

We’re so very lucky to have Gabriel as part of our bakery family!

Meet Jennifer ✨

Born in Australia, Jennifer has always had a passion for travel which brought her to Sweden for a year, where she absolutely fell in love with the culture and local pastries.
Now she's back on home soil and joined the Inner West Swedish Baker team in May this year. You'll spot her at our farmers markets every weekend, and she's also brought her talents to our admin team 💙💛

A creative soul with a love of adventure, Jennifer spends her downtime painting, performing in theatre, and staying active with yoga and rock climbing. She brings that same energy and artistic spirit to everything she does 🎭🎨🧗‍♀️

When it comes to her favourite pastry, Jennifer's heart belongs to our apple custard danish 🍎

Jennifer has spent several years house-sitting dogs and cats all over the world, a true animal lover through and through. Now that she's settling into her own place, she's busy filling it with plants and hopes to add some feline friends to the family soon 🐱🌿🐶

After so many years of adventure abroad, we're so happy Jennifer has found her way back to Australia and into our bakery family. Her warmth, worldly experience and creative spark make her such a wonderful addition to our team ✨

Meet our Swedish Seeded Dark Rye Sourdough 🇸🇪

Think pumpernickel, but loaded with seeds and Swedish soul.
We add fennel seeds for that gentle licorice flavour, and dark molasses for a subtle sweet note.
We also add some buttermilk, which in Geeti’s words “contributes to the yumminess of it all.” 🩵💛

✨ Great source of iron, calcium & magnesium
✨ Fennel aids digestion, heart health & inflammation
✨ Geeti recommends it for breastfeeding mothers

Her personal favourite way to eat it is simple:
good butter, Danish cheese, and pickles...
