With the final few weeks of 2025 underway, we are getting ready to package our GABS 2025 festival brew!

🍑 🥛 Peach Cobbler: Cream Sour (6.4%)

Based on the traditional southern American dessert, this heavily fruited sour captures the essence of ripe, juicy peaches intertwined with the comforting aroma of freshly baked cobbler.

Pours like a thick smoothie and with a hazy golden hue, hinting for what’s to come. A creamy body (thanks to the bucket loads of liquid ice cream additions) and lingering head then evokes memories of whipped cream topping.

The first sip reveals a delightful blend of sweet peach nectar and hints of cinnamon and nutmeg, mimicking the warmth of a spiced crust. Each swallow brings forth layers of flavor: the buttery smoothness akin to a rich pastry crust balanced by sticky rich peach nectar.

Introducing-

ASPRA : American witbier (4.5%) 🍋 🍊 🌿

This is our recreation of a classic American style wheat beer, with a science-y twist of course! 🧪 🥼

Named after the Greek word for “bright” or “white,” Aspra captures the spirit of brightness and freshness in every sip. Pouring a hazy straw gold, this American-style witbier shines with vibrant notes of orange, coriander, and a subtle hint of spice, resting on a smooth, creamy wheat base. A gentle floral hop lift combined with hop-derived orange, grapefruit and citrus isolates from , bring a modern energy to the traditional witbier, inspired by the iconic American interpretations of this Belgian classic. Light yet expressive, Aspra is brewed for moments that call for brightness and refreshment.

Dear fellow beer nerds,��We want to take a moment to share an update on The Zythologist's journey towards opening our own brewpub in the city of Monash, which, as many of you know, has been a dream project for myself, Daniel & Gina for the last two years.
It was our final semester at Monash University in 2021, when us three Engineering/Science students with no prior business experience, no external funding and minimal (real-world) industry experience, decided to combine our passions and take the brave step of establishing our own craft brewery. The Zythologist started as a small-scale gypsy brewer with big dreams of bringing something new to the market. From debuting with a first of its kind pseudo- barrel aged stout showcasing our scientific approach, to using unique ingredients in our beers (tamarind, rose petals, taro root, saltbush..... clam juice!) which won us medals; the milestones have been many.�
In 2023, after growing the business with a lot of hard work and passion, we submitted a proposal to open our own physical brewery and beer hall in Hughesdale. The vision was to create a vibrant space where science meets craft; showcasing our beers, sharing the knowledge and offering a complete 'The Zythologist' experience. However, after two years of facing friction from local planning authorities, we recently received the disappointing news that our application has been rejected by the Victorian Civil and Administrative Tribunal, following the City of Monash’s earlier decision.

This outcome is certainly a setback, especially as we believe the brewery was a great fit for the Oakleigh area. With so few breweries nearby, we envisioned a place that not only served great beer but also became a gathering point for the community. Unfortunately, concerns raised by a couple of local residents about noise and traffic outweighed this potential.
While it’s disheartening, we remain hopeful. We have invested significant time and resources into this dream, and while the journey is taking an unexpected turn, we are not giving up. We are considering alternative paths and other potential sites where our dream could be reimagined. The craft beer landscape is challenging right now, with many facing closures, and your support now means more than ever to keep craft beer alive.
