A sneak peek into the process of making our fine chocolates, all made onsite in Leura. Artisan hands throughout the whole process from hand decorating to shelling and filling . These two chocolates both contain our beautiful macadamia praline that we make ourselves from Northern NSW grown macadamia. The dark dome also has a passion fruit inclusion,and the caramel chocolate has a French style caramel inclusion and crunchy buckwheat to complement and contrast with the ultra smooth macadamia praline. The caramel chocolate video is on 3x speed!

Yes, the answer is these ‘coffee cups’ are entirely made of chocolate! We’ve had a lot of you asking! We made white chocolate cups and we’ve created a cocoa butter transfer of our logo and Navarra Venues to brand them with and a dark chocolate lid to top them off. It was such a fun project! Fill them with whatever you fancy … check the last reel for a super easy Tiramisu recipe.

We quietly support many local charities at Josophan’s. But one of our favourites further away we have been supporting for close to 20 years is the Sala Bai programme in Siem Reap, Cambodia. We’d just like to give a shout out to them here.
A non profit hospitality school, Sala Bai offers a fully paid 12 month residential training programme each year for 150 young people living in poverty, focussed heavily on young women. With a 100% employment success rate after the training, the results speak for themselves, truly changing lives, lifting not only the student out of poverty, but also their extended family. Even just one fair wage in a family can create so much opportunity.
Last week 2 of our hampers (being modelled in the pic!) we donated sold for $1500 at an annual fundraising auction. A big thanks to the generous bidders, whose generosity will help so very much. If you would like to know more about this amazing charity, reach out and we can connect you.

It’s that time of year again! Leura Harvest Festival is just around the corner, on Saturday May 2nd. We can’t wait to see and taste the great chocolate cakes. Encourage your favourite chocolate cake baker to enter - the first 5 entries in each category get 500g free Callebaut fair trade chocolate for making their cake. 1.30 pm the cakes will parade up Leura Mall for judging. Prize winners will be announced at 2.30 pm when we will cut the cakes and share with spectators … yum!!
