Not every childhood memory begins with dessert. Some begin with the aroma of simmering peanuts, spices and a pot of chicken mafé. Growing up on the outskirts of Paris, these West African flavours were part of everyday life. This month, I’m turning that memory into my Pie of the Month: Chicken Mafé. A little piece of home, wrapped in pastry. Available weekends for the month of August.
