Pecan Pie - the Bliss Baking Company story 📖

I tasted pecan pie for the first time in 2008 on a trip to the US. I have loved it ever since.

My boyfriend at the time was working in Houston and I went over to visit him and we traveled together for few weeks. Texas, Nevada, New York 🇺🇸 ❤️

We did all the best things Texas has to offer and I fell in love with it all - especially pecan pie.

That boyfriend is now my husband and we grew a little travelling family.

✈️When the kids were 2, 4 & 6 years old, we returned to Houston to call Texas home for 3 years.

And that is was the beginning of the Bliss Baking Co pecan pie.

I tweaked and tested until I got the perfect pastry:filling:nut combo …and every bite is exquisite BLISS. More nuts. Less filling. Sweet shortcrust pastry.

With the cost of everything going up….the question is, what am I willing to do to deliver Bliss without compromising quality?

Savings vs flavour 🤔

My margins are tight.
My standards are high.

I only buy the best vanilla bean paste, eggs & butter.
I hunt down the best deals for sugar & flour.

I’m small one woman show. I can’t risk less than perfect tasting product. 1 bad review does more damage than 20 or even 100 good reviews can repair. Why is that??

McDonald’s stuffs up once & you still go back for more.
A small business stuffs up & you never go back.

Happy to do a shopping list of where I get the best value for money on all my ingredients. Let me know if this is something you are interested in. I don’t gate keep anything that will help another business.

Why Italian meringue buttercream ?

1️⃣ silky smooth like mousse
2️⃣ doesn’t form a crusty outer shell
4️⃣ sweet but not sickly
3️⃣ ~ 70% less sugar than standard American buttercream

The difference is noticeable:

* American buttercream is sweeter, denser, and slightly gritty from powdered sugar.
* Italian meringue buttercream is smoother, lighter, and much less sweet because its structure comes from the meringue and butter rather than large amounts of sugar.
