With the release of my Bake-It-Yourself kits (currently only available through The Grain Grocer), here are the instructions which I haven't recorded... YET.
Need:
INGREDIENTS
1 NGNK bread kit
10ml apple cider vinegar
475ml warm water
100ml room temp water (keep separate to warm water)
Dairy free spread for loaf tin
UTENSILS
Bench top mixer with paddle attachment
23cmx12cm Loaf tin
Baking tray
Cling film
Method
1. Dissolve the sugar in the warm water, then add the yeast and set aside somewhere warm for 10 minutes to activate. I tend to use the cup warmer on my coffee machine for this. Your yeast should sink to the bottom initially, and then return to the surface in a "Bloom" as the yeast awakens and activates.
2. Lightly crush the Chia seeds and soak in 100ml of water for at least 5 minutes.
3. Add the dry ingredients in a large bowl or the bowl of a benchtop stand mixer.
4. Add the Chia seeds and Apple Cider Vinegar to the dry ingredients as well as the yeast mix, then mix on high speed for 4 minutes. After this, set aside to rest uncovered for 10 minutes.
5. During the 10 minutes, butter/grease a 23cm*12cm loaf tin. My preference is for Nuttelex which covers the Dairy Free component of this recipe.
6. After resting, transfer the dough to the loaf tin, trying not to over work or knock the wind out of the dough. Cover loosely with plastic wrap, and allow to prove for 40 minutes. Depending on the warmth of your location, you may need up to 10 minutes more or less for your loaf to prove.
7. Heat your oven to 230°C Fan Forced/250° standard, place one rack in the middle of the oven and place a baking tray on the bottom rack. Ensure your kettle has at least 2 cups of boiling water in it, as you will need 1 cup of boiling water to pour into the baking tray as you place the loaf in.
8. After proving, remove the plastic wrap, score the top of the loaf (typically with 3 scores) then place your loaf to the middle rack in the oven. Also add your 1 cup of boiling water to the baking tray, then cook for 20 minutes.
9. After this initial 20 minutes, reduce temperature to 190°C fan forced or 210°C standard and cook for a further 30 minutes.
10. After cooking, remove from the oven and immediately tip out onto a cooling rack. Allow to cool fully before slicing.
11. Voila!! Enjoy.
