Due to this being a hobby, and me having another job, I would require 48hr advance orders to allow time for shopping and completing the order.

One of my Favourites which I made this past weekend! ...
LEMON MERINGUE PIE!

Super easy & simple! The best part is you only need one bowl!

All You Need to do is:

Preheat the oven to 160 degrees celcius.

Mix 100g (about 1 pack) of crushed Match Biscuits / Ginger Snaps with Melted Butter (30-50g).

Press into the bottom of a pie dish / baking tin.

Put in the fridge (for butter to cool and bond)

Now mix 1 tin of Condensed Milk, the JUICE of 2 Lemons and YOLK of 3 eggs together (save the whites for the meringue!!). TIP: Add a little LEMON RIND for some extra zestiness.

Pour into tin over the biscuit base.

Place in the oven while you make the meringue.

Beat the EGG WHITES (3) until they form stiff peaks (Don't over beat). Once stiff peaks are formed, gradually add 112g (just less than 1/2 cup) of CASTOR SUGAR while continuously beating.

Briefly remove dish from oven, top it with the meringue & then return it to the oven baking for 10-15 minutes. Until the meringue is slightly firm and golden in colour!

Once done allow it to cool, you can refridgerate it for it to set a little better!

And VOILA! ENJOY
