After a chocolate making course at the Australian Patisserie Academy in Sydney I was hooked, several training courses and master classes later I'm making chocolates, chocolates and more chocolates. Chocolate confectionary is also on the menu including chocolate covered honeycomb, nougat and marshmallow all made with honey from our own hives here in Jindabyne.

Flavours include home grown Kumquat fruit paste & hazelnut praline and Blood Orange over a dark chocolate ganache. Our pistachio cream and pistachio praline has moved to a dark chocolate shell and a Passionfruit caramel over Almond praline
