A second adventure with Euro imported cake mix! Buttery, coconutty and with the added fun of double-checking German instructions. Inside the box there was even a fold-out cake pan to be found. πŸ’―

Authentic continental cake...from a German Mamorkuchen packet! Kindly mailed to me across the seas by ._.christian

Surprisingly great premix result. Just wish I could recreate this classic with locally available ingredients.

Take a bite, because with this quantity of butter, it must be keto! πŸ˜‰

OBSERVATIONS
⭐ Very light, springy texture that can't be achieved with flour grown/sold here.
⭐ Nice trick from the instructions is to shallow-drag a knife lengthwise through the cake early in baking. Reduces the top burst although in my case, I should have picked a larger tin!
⭐ The icing was unusual. Premixed in a foil packet, to be placed in hot water to melt, then squeezed straight out.

What are you baking at home this Easter? I'm sharing the fun of my lazy 🍊 slab bake with (very random) ingredients which are at hand.

⏺️ Base layer: a kind of muffin batter with surplus rye sourdough starter, almond meal, wheat flour, molasses
⏺️ Topped with orange pieces, pre-caramelised in pan with olive oil and fennel seeds
⏺️ Then salt AND tamari on top

Blackberries are here and so is this tart. πŸ“

Filling: fresh ripe berries with a little raw honey and lemon juice.
Crust: shortcrust pastry with toasted almond flour.

Next time with this recipe, I'll try a few tweaks. And blind bake a few minutes less in the oven...but hey, no one minds when it's a casual coffee break! Crowd approved.

And...the Hammies are out!

(Hamantaschen AKA Jammy Shortbread Triangles for the uninitiated. A European/Ashkenazi Jewish tradition for Purim. Which is right about now.)

The filling for this batch is a spin on the popular coconut + jam filling, this time with apricot and marmalade. πŸ‘πŸŠ Admittedly a sugar hit but with a strangely satisfying texture.
