There is alot of talk of what causes gluten intolerance. Even if it is gluten intolerance. Interesting points of view I've watched or read lately from Tyler Tolman and Gary Brecka both with comments on not the gluten content but in the pesticides used on wheats and the genetic modification of grains ... but anyway ... it's all food for thought ... the power of which is to keep researching and listening ... just while you are listening you can start by eating organic sourdough breads.
Start by asking is it the gluten or the grains not being processed or the chemicals.
My take on it as a Baker of many years is the gluten (Lectins) are broken down by the fermentation process of sourdough ... making sourdough immediately better.
