This week: Pandan coconut cake with raspberry coulis filling; vanilla cake with Biscoff filling & Biscoff buttercream; vanilla blueberry cake with lemon curd filling & strawberry buttercream; chocolate cake with whipped chocolate ganache filling, chocolate buttercream and dark choc drizzle.

It's been a tough week. I hope some cupcakes brought you joy, either seeing them on the feed or eating them. Four Pay It Forward boxes went out too. Yay. Thanks everyone.

No cupcake run next week. Hopefully I can start on my first little recipe zine and post some cake pics.

Stay safe and get vaccinated! πŸ’“πŸ’“

Don't forget to set your alarm for 5pm tomorrow. This week's cupcake drop is happening. 😊🍰🌈

Next cupcake drop coming this Tuesday 17th 5pm. 🍰🍰🍰 Same as usual - limited numbers, a bunch reserved for Pay It Forward nominations, and first in best dressed. Last run sold out in under 4 mins. Only change is pick up will be on Saturday and Sunday now as my schedule has changed from uni starting this week.

Sorry for being quiet, lockdown depression and fibromyalgia fatigue have been really high, and uni started again this week so adjusting to studying online. I have been avoiding my work email and my DMs because it all just feels a bit pointless at the moment. Climate report and anti-vaxxers and people who call the c0ps all got me feeling crappy. Blergh.

Hope I can bring you some sweet joy my next week. Thanks for always getting so excited and grateful.

If you wanna nominate a flavour you're free to in the comments. I'll see how I feel. πŸ˜‚

Thanks for another great week of lockdown cupcakes. I sent out a few more Pay It Forward boxes, too, and there is still money in the fund to go towards more so please don't be shy to nominate for my next run. I'll be taking next week off to have a rest, as I can feel a lot of fatigue and muscular pain setting in still even after resting the last few days. I should be back the week after, but I'll keep you all posted. In the meanwhile, I'm going to go back through my cake photo archives and finally edit some of the hundreds of cakes I've never posted. πŸ˜‚

Stay safe everyone and please wear your mask! πŸ’“πŸ’“

All these cupcakes got me missing my cakes. The workload between the two is astronomical, however. While cupcakes are en masse with a focus on speed, consistency, yet individuality across them, cakes are a whole different story. None of my cakes are identical. They take hours, from design consultation, research and brainstorming, sourcing materials, sketching and planning, then the actual baking, stacking, waiting for things to cool, waiting for layers to set, colouring buttercream, and once my canvas is finally ready, actually bringing my imagined design to life. I love cakes and the canvas it presents for me, but I have grown to loathe the many hours it takes to make not one custom creation a week, but tens of. Forced creativity under capitalism, loaded upon my body's complex health needs. But then, I look back to the cakes that I have created over the years. Thousands of them, by now, made with my two hands (and some with the help and labour of others!). I love what I design, and I love that people come back to me for my creative mind.

Anyway. A few Thursday thoughts before I get hustling on baking 200ish cupcakes today for your weekend orders. Here is a cake I made in May for my beautiful friend Sarah's birthday. Sarah is the owner of the AMAZING Newtown cafe, who make vegan Palestinian food. She wanted pink and 90s! This is what I came up with. Inside is Pandan raspberry signature MLPK cake.

A final thought following on from the idea of Palestinian freedom - lockdowns are hard, but they are NOT an oppression of your freedoms. They are a health order to work together as a community to protect those most vulnerable amongst us. I'm one of those vulnerable people. So don't be a dick and don't go to a ~freedom march~ especially if you aren't fighting for the freedoms of Black, Indigenous, q***r, trans, disabled, incarcerated, marginalised and oppressed folks both here and internationally.

Well, lockdown continues, so here comes another run of lockdown cupcake boxes! This week's boxes go on sale tomorrow, Tuesday 27th July at 5pm. There are a limited number of boxes (seriously!!), plus an additional number from the Pay Its Forward fund that I will allocate this week as I work through previous requests. The link is on my bio for my online store! πŸŽ‚πŸŽ‚πŸŽ‚

I actually haven't decided on flavours yet for this week so please feel free to chime in below if you have any requests and I'll add to my brainstorm list. 🀣

You can still contribute to the PIF fund too! There has been an amazing $785 contributed, which is just over 11 cupcake boxes, that have or will be paid forward to awesome community members in need. I allocated 4 in the last run, and delivered another 1 this last week, so there are still a few left to allocate in the coming weeks.

I'm getting myself as well rested as I can so I'm ready for smashing out a big week of delicious treats. I gotta say, the lockdown depression has been hitting me hard, but the messages I receive about how much you enjoy your sweets means the world. It's a lil bit of joy I can put out there. πŸ’“

Hey friends! No cupcake run this week so I can rest, the last two weeks really hit me hard. Lots of rest and cuddles with Cindy cattle dog, she was unwell last week, too. 🐢

I will be doing my NEXT RUN of limited edition lockdown cupcake boxes NEXT WEEK. They will go on sale again through my website (link in bio) at 5pm on the dot, on Tuesday 27th July for pick up on Friday 30th July. There will be 10 boxes (unless I feel brave/stupid and add some more) along w/ several more allocated to the Pay It Forward fund. ❀️ I mean it when I say to set your alarms and get in quick. Last week's run sold out in under four minutes! Wild. Feel free to comment flavour ideas below!! πŸ˜€πŸ°

Thank you SO much to the generous PIF donors. The recipients have been totally overjoyed, it's so beautiful to be a part of making sweet memories in tough times.

Given case numbers of COVID here in NSW, I think it's safe to assume we will still be in lockdown through much of August. I do start back at uni in the second week of August, so I'll have to feel out how I'm handling everything to see how cupcake runs go. I'm trying to access some of the disaster payment options to help me keep going, but if you've ever dealt with that never ending phone call on hold... πŸ˜±πŸ™ŠSo, one step at a time. If I can make cuppies, I'll do it. But I'm hoping to focus some energy soon on making a little recipe zine...

Sending everyone lots of love and gentleness in all the madness. Please keep supporting your local small biz people near you! Not just me! There are some other amazing cake legends in Sydney/Warrang and surrounding lands who are vegan legends that you can order from. are just some of my faves who would love your support, especially when I'm not able to make your sweet goodies. πŸ’“πŸ’“

Here's what decorating a bunch of vanilla biscoff cupcakes looks like, before I dressed them up a bit more in the morning. I'm going to try and work on my video skills a little this week to show what all this pre-boxing cupcake action entails!

Video description: a time-lapse of Panda making cupcakes. Only their hands are visible, with gloves on. They first take the centre out of the cupcakes, then fill with Biscoff spread. Then they mix Biscoff with white buttercream, and top the lines of cupcakes with a beautiful swirl. They then add a few non pareils and sprinkles. At one point they drop some buttercream on the counter. That goes into a separate bowl for later personal consumption.

Lockdown cupcakes round 2. They went up yesterday at 5pm and they were all sold out at 5:04pm. What!!! That's wild. I'm excited to bake this week. There's Biscoff vibes, caramel vibes, peanut butter and raspberry jelly vibes, and of course, Pandan vibes. Yum. If you missed out, I am so so sorry. I wish I could bake everything, for everyone.

I also have been blown away by Pay It Forward cupcake donors. I unfortunately don't have the financial capacity to donate lots of boxes myself, so this system means I can cover my costs of ingredients, packaging, labour and overheads, while getting some boxes to people having a rough go in Sydney lockdown. At this time, there is $750 in the PIF fund! That's 11 boxes of cupcakes! I've allocated the number I can handle this week on top of orders (that's 4 this week), and I'll allocate some more in my next cupcake run. Lockdown in Sydney has been extended until at least the end of July, so I will do at least one more cupcake run.

To be honest, I'm not certain just yet whether that will be next week, or the week after, as it will depend on how my body goes after this baking run, because I have cupcakes plus a couple of cakes that were ordered a while ago. My pain flare after last week's cupcake run was really really bad! Real bad. This week, I'm gonna work on pacing it out a little better. I'll keep you all updated as soon as I can feel out how I'm going, and so you can set alarms for the next round.

Thank you again. Constantly humbled by generosity amazingness from people out there. Stay safe and stay warm. ❀️

Well, that was an extremely short retirement. 🧐🀷🏽

Sydney went into a hard lockdown again right after my last post, which meant other work for me disappeared. Cool, cool, cool. I went through a lot of DONT PANIC and trying to sit and rest as much as I could for the first week. My body was grateful for the opportunity to slow down for a moment. It was really needed. Unfortunately, without any other income streams at the moment, I've had to hustle up some cakes.

So, I did a ten box run of dozen cupcakes this week. I don't usually do cupcakes, I've focused entirely on custom cakes and crafting on a larger scale. However, I knew I couldn't handle doing the Mini cakes again. It was so difficult to get through last year and so I decided to try something different, that could still showcase my love for good flavours and really, really delicious vegan sweet treats.

I didn't even post this on my feed, but damn! Thank you to those who sold me out in a couple of hours, very cool. Thanks to those generous donors of two Pay It Forward boxes to some people who really needed their day brightened. It might just be sugar and fat, but it means the world to me to make you smile. Thank you to all the incredible messages from the other week, public and DM. I'm really humbled.

I've also received a number of generous offers for contributing to some cupcake pay it forward. Shoot me a message if you'd like to add to the fund.

I'll do another run this coming week, to help us all get through another week of what's to come. I'll announce more details later, but set your alarm for 5pm Tuesday for when the weekend isolation treat cupcake box next goes on sale. I'm not sure how many of these my body will let me pull off, so get in while you can I guess? 🀷🏽

It is so, so hard to be a small business at the moment, and I'm sending so much love to all my fellow small biz babes who are doing it solo, doing it disabled, doing it ill, doing it through global grief, doing it through climate change and incompetent governments and through racism and classism and disregard for the mental and physical health of citizens and... Ahhh. It's tiring out here. Look after each other. ❀️

Hello! Some news from me. Thank you, I am filled with love and gratitude. ❀️

I turned 31? I turned 31!! Lemme tell ya, it's nice to finally feel happy to be alive. My life these days is quiet yet so busy. I'm balancing cakes, studying social work and Indonesian, dancing and training, freelance work, and trying to keep myself and my dog socialised, therapised, and well fed. I'm so filled with love and gratitude for all my beloved ones close by (especially when my family is so far and I don't know when I'll see them next) for making sure I felt super cared for this birthday. My friend Erin even baked a delicious apple pecan cake for me!

I've also received a diagnosis regarding my chronic pain and fatigue... Hello, fibromyalgia. It's been really tough and I've had to be much better at resting and taking breaks, because my body will literally give out if I don't. I'm taking a lot less cake orders on at a time now (like a LOT less) so please give me loooots of notice if you're wanting to get into my books. I hate to let people down, and I love creating beautiful and delicious cake art for you all.

I'll be back to posting cakes soon. Just gonna enjoy my less online life a teeny bit longer (or at least, until I finish my uni assessments next week!). πŸ’•πŸ’•
