The Quarter That Earns The Name

Two hundred and fifty grams of meat flesh per kilogram is the line between a pie and a meat pie.

That is a quarter of the whole pie, pastry and gravy included, rather than a quarter of the filling. Meat flesh means skeletal muscle, while meat can be any part of the carcass. A pie under the line is not against the law, it just cannot be sold under the name.

We bake ours here and sell them as meat pies, so that quarter is the floor under ours too. 🥧

A Few Degrees Changes The Timetable

Five degrees of extra warmth overnight can take hours off a sourdough.

Bakers treat that as a rule of thumb rather than a law. Fermentation speeds up sharply as dough warms, and a long sourdough prove is more exposed to it than a short yeasted one, because the culture is working for so many more hours.

Same flour, same water, same starter. Only the room changed, and the timings move from here until February.

The Cold Is Not Finished

September here averages about seventeen degrees by day and four overnight, and it is the four that matters.

The afternoons are what fool people. One clear still night takes back everything the warmth promised, and the ground does not care what the thermometer read at three in the afternoon.

The Rutherglen record behind those figures runs back more than a hundred years, to 1912.

Spring Starts Today

Happy first of September. By the Australian calendar that makes today the first day of spring.

Chiltern has not been told. The mornings are still cold enough that the ovens are doing real work, though the wattle got going weeks ago and it is National Wattle Day as well.

The month ahead stretches the days by more than an hour, puts the school holidays in the middle of it and finishes the football at the end. Spring here arrives in instalments.

On the coldest mornings of the year the front step comes up silvered from edge to edge. Every old groove in the timber catches a fine white line, as though someone has carefully drawn the cold overnight.

I get ten quiet minutes with it, the ovens warming behind me and the street slowly appearing. Then the first customer crosses the step, stamps his boots, and the little artwork starts disappearing under ordinary Saturday life. The early ones pause to inspect it on the way in, comparing it with whatever has gathered on their own fences and windscreens.

There is something pleasing about that. Winter leaves its mark overnight, but the town gets moving all the same, one coffee, one greeting and one pair of muddy boots at a time. ❄️

Well, we have wrestled our way through the depths of July, and I dare say the town has borne the winter with its usual stoic cheer. It is a hard-working month, this one, the coldest mornings and the shortest days, right in the middle of the long haul.

Being a Friday, there is really only one way to mark getting to the other side of it, and that is a freshly baked Ned Kelly pie from the warmer to see the month out properly. 🥧

August is not exactly warm, I know. But it sounds a good deal closer to the far side of winter, and on a frosty Friday you take your hope where you can find it. There is the very faintest whisper of spring somewhere out there.

I am told today marks a day dedicated to international friendship. A grand idea, though the version of it I see is a little smaller and closer to home.

Looking out into the shop this morning, there they were, the old regulars settled in over a shared pot of tea, quietly untangling the world's problems together the way they do most mornings. Solving nothing, and enjoying every minute of it. 🫖

It strikes me that a loyal friend and a warm pastry are surely two of life's most reliable comforts. Neither asks much of you, both make a cold day considerably better, and a country town runs on the pair of them more than it lets on.

Something quietly lovely happened this morning that I nearly missed. I watched a customer settle the bill for the stranger standing behind them in the queue, then slip out the door before any fuss could be made of it.

When the second person went to pay and I told them it was already taken care of, the look on their face was worth the whole morning. They did not know who to thank. Just stood there a moment, a bit stunned, then smiled the rest of the way out the door.

It was a simple, elegant act of kindness, and it warmed the shop far more effectively than the ovens ever could. Costs the price of a coffee, and sets off a little ripple that carries right through the day. ☕

A bit of a mix-up this morning that still makes me chuckle. Two gentlemen somehow ended up walking off with each other's pastry orders, and neither realised the error until they were a good distance down the street.

Back they both came a few minutes later, each holding a bag that was not theirs, both a little sheepish and both laughing about it. Turns out they knew each other anyway, of course they did, so it sorted itself out with a hearty laugh on the pavement before I could get involved. 😄

That is a small town for you. You cannot even hand out the wrong pastry to a stranger, because there are not any. Good humour is alive and well in Chiltern, I am pleased to report.
