It made my heart happy to make this one.
The (paraphrased) brief: “2 tier wedding cake for around 80 serves. Not too white, it’s a second wedding. The filler should be a desaturated eucalyptus green, not a bright green. I like the rustic naked cake look, but not too naked- more icing than cake. The flower girls will be wearing an off white champagne type colour. Gold leaf on the side”
I’m so humbled when people choose me to make their wedding cake. Even if they don’t choose me, but simply to be asked. It means that someone trusts you- a small home baker chasing a dream- with a pretty big part of the happiest day of their life. They want something bf you made to be the first dessert they share together as a married couple. Don’t you think that’s pretty special? I sure do.

The (paraphrased) brief:
“Mountains, Lego, camping. Raspberry cake, 15-20 serves.”
There was a little chatter between to iron out the palette and some other details, but I have to the client for letting me have full creative control over this cake and running with the concept I pictured in my minds eye.

How good and awesome and fun is moving house?

The owner of my apartment is selling and means I need to move in the next 8 weeks. As all home bakers that sell to the public are required to have their kitchens insured, registered with ACT Health and be audited by a health inspector, it means that this is the only kitchen I am permitted to produce food to the public from, and why I can’t just borrow someone else’s kitchen.

Furthermore, considering moving = mess, I’m not taking orders from now until I am settled somewhere because there is no way I can keep my cleanliness status while I am packing. I anticipate the process of finding somewhere and actually moving to take me until around mid - late August.

Once I find somewhere to move that meets the criteria of the home based food business registration guides (sounds tricky but it’s really not- most places fit the bill) I can move in and set up. I can then apply for registration and to have a health inspector through, as well as move my public liability insurance over. If this all goes roughly to plan, I anticipate this takes me to around the start of October. Then I’ll allow another few weeks to rectify any concerns and give some wiggle room just in cases. This is where I came to determine the “end of October”.
