Coffee Date Walnut Cinnamon Honey Cake
Ingredients:
- 1 cup (240 ml) brewed coffee, cooled
- 1/2 cup (120 ml) vegetable oil
- 1/2 cup (120 ml) honey
- 1 cup (200 g) brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups (250 g) all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup (150 g) chopped dates (pitted)
- 1 cup (100 g) chopped walnuts (plus extra for topping)
Instructions:
1. Preheat the oven: Begin by preheating your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper for easier removal.
2. Mix wet ingredients: In a large mixing bowl, combine the cooled brewed coffee, vegetable oil, honey, brown sugar, eggs, and vanilla extract. Whisk together until the mixture is smooth and well combined.
3. Combine dry ingredients: In another bowl, sift together the all-purpose flour, baking soda, baking powder, ground cinnamon, and salt. Mix well to ensure even distribution of the leavening agents and spices.
4. Combine wet and dry mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.
5. Fold in the add-ins: Gently fold in the chopped dates and walnuts, ensuring they are evenly distributed throughout the batter.
6. Pour into the pan: Pour the batter into the prepared cake pan, smoothing the top with a spatula. Sprinkle additional chopped walnuts on top for decoration.
7. Bake the cake: Place the cake in the preheated oven and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. The cake should be golden brown and slightly springy to the touch.
8. Cool the cake: Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
9. Serve: Once cooled, slice the cake and serve it on a simple white plate. It pairs beautifully with a cup of coffee or tea. Optionally, you can dust the top with additional cinnamon or drizzle with honey for extra sweetness.
