🌾 The loaf for people who love real bread.

Our Farmer Loaf is inspired by traditional and artisanal baking methods, slow fermentation, higher hydration, and simple ingredients.

Fermented for more than 30 hours, it develops a deeper flavour, a beautifully caramelised crust, and a soft, moist crumb that stays enjoyable for days.

This is the kind of bread that doesn't need much. A little cultured butter, good olive oil, a hearty soup, or something fresh off the barbecue.

Made with sustainably grown and organic flours, natural sourdough culture, filtered water, and sea salt. Nothing else 🤌

Keep it in a cloth for a few days and it will nourish you when you need it 🤗

We are thrilled to introduce our new Mushroom & Parmesan Quiche: a rich, savoury quiche made with a beautiful blend of locally grown mushrooms from Shroom Brothers in Stokers Siding, including oyster, shiitake, king, shimeji, wood ear and lion's mane mushrooms.

Combined with Grano Padano, Australian garlic, shallots, herbs, coconut kefir, free-range eggs and full cream, this quiche is packed with nourishment and nutrients ♥️👌

Like everything we make, it's crafted from scratch using quality ingredients and thoughtful processes.

A true naturally leavened sourdough, slowly fermented for more than 30 hours to develop flavour, texture, and better digestibility, the traditional way bread was once made.

Made with a blend of sustainable and organic flours, natural sourdough culture, filtered water, and sea salt. That is it!

Designed to be an everyday bread that works with almost anything, from butter and jam to nourishing savoury meals.

One of the beautiful things about slow fermentation is that the bread also keeps naturally longer, staying fresh for days without additives or preservatives.

This is part of the technology behind our bakery, the Sancassiano Hydra mixing system.

Designed specifically for high-hydration dough and long natural fermentation, it allows us to produce large volumes of dough while maintaining consistency, dough strength, and quality.

Each movable bowl holds up to 200kg of dough and transitions directly into controlled bulk fermentation. Combined with our lifting system (“the back saver”), it also dramatically reduces physical strain on our bakers.

A French classic reworked through the Burleigh Baker lens 🥸

Our Pain aux Raisins starts with naturally fermented croissant dough, layered with cultured pastry cream and finished with Australian sun-dried sultanas.

The long fermentation develops deeper flavour and a lighter, more balanced finish, while the cultured cream brings richness without relying on artificial shortcuts. Convinced yet? 😋

Soft in the centre, caramelised on the edges, buttery, slightly tangy, and naturally sweet from the fruit.

Real viennoiserie takes time.

Our Pumpkin Sourdough is made with whole butternut pumpkin, crunchy pepita seeds, turmeric, cumin, and slowly fermented for 24 to 30 hours.

The natural sweetness of the pumpkin, the warmth of the spices, and the depth created through fermentation bring everything into balance.

Rich in fibre, nourishing, and designed to sit well after eating, this is one of those loaves that works just as well toasted in the morning as it does for sandwiches later in the day.
