Delighted to see pine nut sun cookie featured in the as a top 25 pastry in NYC!

Itโ€™s a departure from the taiyang bing you see in Taiwan, but the simple brown sugar filling and the flakey, light dough stole through our hearts and Danielle could not let the inspiration go.

When she thought to laminate rather than fold, the end product was delicious. The simple addition of butter-fried pine nuts to the sugar filling made the pastry feel thoughtfully personal rather than like an imitation of the original.

kindly informed us that the cookie looks more like a sun flower and went on to educate us about Taiyang bakery history and the significance of the sun flower.
