Passionfruit and Lime Melting Moments
A light and buttery biscuit with a zesty filling!
Ingredients
Biscuits
¾ cup (170g) Butter or margarine, softened
¾ cup (100g) Icing sugar
1 tsp Vanilla essence
2 cups (250g) Plain flour
3 Tbsp (30g) Custard powder
1 Tbsp Lemon juice
Filling
¾ cup Icing sugar, sifted
1 Tbsp Passionfruit pulp
Zest of 1 lLme
Method
Preheat the oven to 180°C.
Lightly grease or line a baking tray with baking paper.
Cream the butter and icing sugar together until light and fluffy.
Add the vanilla essence, lemon juice, and custard powder. Mix well.
Fold in the flour and mix until a smooth, workable dough forms.
Roll out the dough and cut into shapes using a cookie cutter.
Alternatively, roll the dough into small balls and gently flatten with a fork.
Place on the prepared baking tray and bake for 12–15 minutes, or until lightly golden underneath.
Allow the biscuits to cool completely.
Filling
Sift the icing sugar into a bowl.
Add the passionfruit pulp and lime zest, mixing until smooth.
Spread or pipe a small amount of filling onto one biscuit and sandwich with another.
